Earlier this week, I posted my go-to recipe for BBQ shredded chicken, and today, I’m sharing my absolute favorite thing to make with that BBQ chicken: BBQ chicken sandwiches. These sandwiches are pretty much my notion of what a perfect sandwich should be. A gently toasted brioche bread holds soft, smoky sweet shredded chicken and a zesty, crunchy coleslaw that ties everything together in a mouthwatering sandwich.

The BBQ or the slow cooker aren’t necessary this time.

If you’ve ever prepared my shredded chicken or stovetop chicken breasts, the cooking procedure used here will be familiar to you.

In addition to absorbing a great deal of flavor from the sauce as it cooks, cooking chicken breasts in liquid makes it very difficult to burn them, resulting in chicken breasts that require very little watching during the preparation process.

Cook the chicken breasts in the pan until they are lightly browned on both sides. Then, turn the chicken breasts over and spoon the barbecue sauce mixture over the top. Bring the sauce to a simmer, then decrease the heat to medium-low, maintaining the sauce at a gentle simmer the entire time. Cook for 5 minutes with the lid on. Cover and continue to cook until an instant-read thermometer put into the thickest part of the meat registers 165°F, which should take 3 to 6 minutes longer on the second side.

Coleslaw

  • While the chicken is simmering, combine all of the coleslaw ingredients in a medium-sized mixing basin. Taste and adjust the seasonings with extra sugar, salt, or vinegar if necessary.

Finish Chicken and Assemble Sandwiches

  • Transfer the chicken to a chopping board and let it aside for 5 to 10 minutes to rest before slicing. Allow the sauce to continue to simmer, uncovered, with occasional stirring, until it thickens
  • Remove from heat. Remove the chicken breasts from the pan and return them to the pan with the sauce. Stir until everything is well-coated. Turn your broiler to the highest setting. Open the buns and lay them on a baking sheet to bake for 20 minutes. Easy and tasty BBQ Chicken Sandwiches that can be made on the stovetop, in the Instant Pot, or in the Slow Cooker (or all three!) Top of the stove:

  • 4 big boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • 1 cup water for a saucepan

Slow cooker (also known as a crockpot):

  • 1/4 cup BBQ Sauce
  • 4 big boneless, skinless chicken breasts
  • 1 1/2 cups BBQ Sauce

Instant Pot (also known as a pressure cooker):

  • 2 cups of boneless, skinless chicken breasts
  • 1 cup of barbecue sauce
  • 1 cup of chicken broth

Sandwiches:

  • Fresh romaine or butter lettuce
  • Fresh cilantro
  • Paleo ranch dressing
  • Hamburger buns (you may use any kind you prefer: regular, paleo, grain-free). Make 1 batch of Creamy Coleslaw (optional).
  1. Fill a medium-sized or large saucepan 3/4 of the way with water
  2. Set aside. Bring the water to a boil
  3. Immediately place the chicken in a pot of boiling water and decrease the heat to a simmer. Allow 15-20 minutes of simmering time. Carefully remove the chicken and check that the temperature in the middle of the thickest section of the bird has reached 165 degrees. To shred the chicken, place it on a platter and shred with two forks. Place in a mixing dish with the BBQ Sauce and toss until well combined.

Slow cooker (also known as a crockpot):

  1. Place the chicken breasts in the crock pot on low heat
  2. 1 cup barbecue sauce should be poured over the top. Cover and cook on HIGH for 3-4 hours or LOW for 6-8 hours on the stovetop. Shred the chicken with two forks after it has finished cooking. Although the heat will thin out the sauce, once it has cooled and been thoroughly mixed with the shredded chicken, it will thicken again. Add the remaining 1/2 cup barbecue sauce (or more if desired)
  3. Toss until well combined.

Instant Pot (also known as a pressure cooker):

  1. 1 cup chicken broth (or water) should be added to the Instant Pot. Place the chicken in the oven (there is no need for a trivet). Press “Seal” on the Instant Pot’s dial, and cook at high pressure for 8-10 minutes
  2. Allow the Instant Pot to naturally release its pressure
  3. Remove the chicken from the Instant Pot and set it on a platter
  4. Drain any residual liquid from the Instant Pot. Remove the chicken from the Instant Pot and shred it with two forks before putting it back in. Stir in the BBQ Sauce until everything is well-combined.
  • Open your bread, place some lettuce and coleslaw on the bottom, top with your barbecue chicken, drizzle on some ranch dressing, then place the second half of your sandwich on top! Super simple and delicious
