It’s created with thinly sliced turkey (or chicken! ), toasted bread, crispy bacon, and fresh baby arugula, to name a few ingredients. It’s loaded with juicy tomatoes and the greatest homemade tarragon aioli you’ve ever tasted. You’ll want to lick the spoon after eating it.

But first and foremost, what exactly is a club sandwich? This lunchtime favorite, also known as a clubhouse sandwich, is constructed by placing toasted bread, sliced fowl (turkey or chicken), bacon, lettuce, tomato, and mayonnaise on top of a toasted roll. It’s not uncommon at restaurants to see these sandwiches cooked with three pieces of bread each sandwich. Even while we enjoy it with only two slices of toasted bread, you may always add an extra piece if you want! To make the homemade tarragon aioli, combine a big egg, 1 garlic clove, fresh lemon juice, canola oil, extra virgin olive oil, Kosher salt, black pepper, and fresh tarragon in a mixing bowl until well combined. This is the most delicious aioli I’ve ever tasted in my whole life! When we don’t have tartar sauce, we make our best ever crab cake sandwiches, which we serve with butter poached cod, spread over poached eggs, and even over our best ever butter poached cod!

Homemade aioli may keep for up to a week in the refrigerator, though it will most likely separate before then. If it has been sitting in the fridge for a while, we recommend giving it a thorough whisk before using it. The taste will get more intense the longer it is left to sit!

How To Make A Club Sandwich

  1. Prepare the theaioli. In the bowl of a food processor fitted with a blade attachment, combine the egg, minced garlic, and freshly squeezed lemon juice. Process until the ingredients are finely minced, then gently stream in the canola oil while the machine is going. Continue to process for another 30 seconds, or until all of the ingredients are fully combined. Scrape down the edges of the pan and repeat the process. Finish the aioli by whisking it together. Toss the mixture into a large mixing bowl and slowly drizzle in the extra virgin olive oil, whisking the whole time. The aioli will be smooth and thick, with a pale yellow color to it. Toss in the finely chopped tarragon, Kosher salt, and freshly ground black pepper. Refrigerate until required after stirring to combine flavors. Toasted bread is a must-have. Remove bread from toaster oven and set on a wire rack until the rest of the ingredients are ready to be added to it. Using this method, you can keep the bread crispy. Assemble the California club sandwiches according to package directions. Spread a thin coating of tarragon aiolion sauce both sides of the toasted bread and toast for another minute. Layer the following items on top of the bottom piece: 1 and a half pieces of crispy bacon, thinly sliced turkey, and two tomato slices Place a layer of thinly sliced avocado on top of the top slice of bread and toast until golden. seasoning both the tomato and the avocado with kosher salt and freshly ground black pepper Place a good handful of arugula (or other greens) on top of the tomato, then flip the bread over and place the avocado on top
  2. Secure with skewers. Repeat with other ingredients. Make a compass shape out of four toothpicks or skewers and insert them into the sandwich (N, S, E, W). The fact that they haven’t gotten completely through the loaf of bread is OK. Using a sharp knife, slice the sandwich. To make four triangular pieces out of the sandwich, cut it in an X form with a sharp knife (see photo below!). Using a toothpick or skewer, push the toothpick or skewer through the remaining holes in each piece. Serve as soon as possible
