One of my favorite breakfast sandwiches is made with toasted croissants, soft scrambled eggs, and loads of vegetables. Messy, filling, and really excellent!

Ingredients

2 croissants, purchased from a bakery 1/2 avocado, sliced 1/2 tomato, sliced2 ounces cheddar cheese, grated3 eggs, scrambled1 teaspoon butter Ingredients: 1/2 avocado, sliced 1/2 tomato, sliced 1/4 cup crispy sprouts (optional) seasoning with salt and pepper

Instructions

2) Set oven to 400 degrees Fahrenheit (200 degrees Celsius). 2) Carefully cut croissants in half and arrange them on a baking sheet with the cut side facing up. Preheat the oven to 400 degrees for 5 minutes to toast the bread. 3) Take the croissants out of the oven. On the bottom half of the croissant, place sliced avocado and tomato on top. On the top half of the croissant, sprinkle grated cheese. 4) Bake for another 3-4 minutes in the oven. 5) Melt a tiny amount of butter in a nonstick pan over medium-high heat until the butter is melted.

  • Pour in the eggs and cook for 2-3 minutes, pushing cooked eggs to the middle of the skillet, until they are gently scrambled but still have some liquid to them.
  • Remove the pan from the heat and season with a pinch of sea salt to taste.

  • Place a cheesy topping on top of the croissant and serve immediately!
