How to make Cucumber Sandwiches

In a small mixing dish, combine softened cream cheese, mayonnaise, dill, lemon juice, garlic powder, and salt. Refrigerate until ready to use. To thoroughly combine the ingredients, use a hand mixer or a spoon. Peel and slice the cucumber- Using a mandoline or a sharp knife, peel and slice the cucumber into 1/8 inch slices. Remove the crusts- Cut the crusts off of the bread so that it can be cut into rectangles. Assemble and cut the sandwiches- Spread about 1 spoonful of cream cheese filling onto each piece of bread for each sandwich.

Stack the second piece of bread on top of the first, then gently cut it into four triangles or four squares.

Make-ahead tips

Making these sandwiches ahead of time may be a good idea. My best recommendation is to prepare the separate components first, and then combine them just before you’re ready to serve them to your guests. It is possible to make the filling, peel and slice the cucumbers, and take off the crusts of the bread up to one day ahead of time, and then store them separately until you are ready to use them. Make sure that the cream cheese mixture is softened before spreading it over the bread slices.

  • 1-2 medium-sized cucumbers (fresh)
  • 2 cans coconut milk, refrigerated at least 2 hours
  • 1/2 medium onion
  • 2 teaspoons dill weed
  • 2 tablespoons olive oil
  • Half-tablespoon salt
  • Pinch granulated garlic
  • Muslin cloth

Instructions

  1. To begin, you must prepare your Coconut Milk Cream Cheese by laying a linen towel over a bowl and pressing the cloth down to form a depression
  2. The coconut cream should be placed in a dip in the cloth created by opening the coconut cans and pouring off the water
  3. The cream should be wrapped in a towel and squeezed to remove the excess water. It’s important to be careful here because you don’t want to press too much out
  4. You only want enough to make the cream more firm, like cream cheese. Remove the water from the bowl and place the cheese (we’re going to refer to it as cheese from now on) in the bowl without using the towel
  5. Take a break from that and grate your onion
  6. Add the onion to the cheese and mix well. Combine the dill, lemon juice, garlic, and salt in a mixing bowl. Stir until the ingredients are fully combined. Remove from consideration
  7. Remove the crusts off the slices of bread and set them aside. Using a sharp knife, cut the bread into triangles (since we’re fancy like that)

  9. Peel the cucumber(s) and cut them into slices that are 1/8 to 1/4 inch broad and no more than an inch or so in length. Spread roughly a half-tablespoon of the cheese mixture on one side of each piece of bread, using a butter knife. One layer of cucumber slices should be placed on half of the bread slices. Add an uncucumbed piece of bread on top of each slice of bread with cucumber and softly mash the two together. Placing them on your most beautiful dish and serving them at your next tea party
