This sandwich served as dinner for the kids, who also had homemade tomato soup for dessert. I followed the instructions to the letter, but I only made two sandwiches instead of three. It doesn’t matter how you prepare your turkey; this is one of those very simple recipes that is wonderful to have on hand in case you find yourself entertaining a crowd or in need of a supper concept that just requires a few simple components. We’ve even been known to serve this atop egg noodles on occasion. It would also be delicious served over mashed potatoes instead of the traditional Turkey Manhattan.

The original recipe for these sandwiches may be found in Gooseberry Patch’s Slow-Cooker Christmas Favorites, which I purchased. This recipe called for 8 cups of diced cooked turkey, therefore I substituted 2 pounds lunch meat for the turkey in order to make it lunch meat friendly.

Freezer Cooking Caution:

Because a complete recipe makes a substantial 12-16 sandwiches, I attempted to freeze it, but the lunch meat broke apart when reheated after freezing. I want to test it with leftover turkey in the near future, and I will update this post as soon as I get results.
