On the grocery store shelves, they’re commonly referred to as cherry peppers when they’re sold fresh. Pimento peppers are even milder than red bell peppers in terms of heat. You may be familiar with them as the little red peppers that are packed into green olives. Please be assured that pimento cheese has absolutely nothing to do with pimento loaf if you’re from the Midwestern United States.

Pimento Cheese Ingredients

To make pimento cheese in its most basic form, combine cheddar cheese with pimento peppers and mayonnaise in a mixing bowl. Freshly prepared, homemade pimento cheese is considerably superior than store-bought alternatives in terms of flavor. Using high-quality products and preparing it at home, you may avoid the use of weird preservatives. Here’s everything you’ll need to get started.

Extra-Sharp Cheddar Cheese

Make sure to choose a great extra-sharp cheddar cheese so that the cheddar flavor may stand out above everything others. Tillamook was the brand I used. Hand-grate your cheese using the big holes of a box grater to get a fine texture. Do not purchase pre-shredded cheese since it is covered in a powder that dulls the flavor and interferes with the creamy texture of the finished product.

Cream Cheese

Raise your hand if you grew up adoring pimento cheese as a child! Oh, oh, this old Southern spread brings back a lot of fond memories for me from my childhood. When we were youngsters, we always looked forward to breaking open those small store-bought jars of it for snack time, whether it was dolloped on Ritz or Club crackers or smeared inside crunchy celery sticks.

When a friend taught me to her family’s recipe for homemade pimento cheese in college, it wasn’t until years later that I learned how much better the scratch version could be than the store-bought version could be.

Made with a nice sharp cheddar, tangy cream cheese and mayonnaise, roasted red peppers, fresh green onions, and a combination of spicy spices, this simple spread stands the test of time and remains delectably delicious.

Alternatively, I’ve included a list of additional creative ways to include pimento cheese into your meals, ranging from spreading it on sandwiches (hello, grilled cheese) to burgers, baked potatoes, deviled eggs, and more.

Homemade Pimento Cheese Ingredients:

Before we get into the specifics of the pimento cheese recipe that follows, here are a few notes on the things you’ll need to make it:

  • Ordinary cream cheese: I make this spread with regular cream cheese, but you may simply substitute low-fat cream cheese if you want
  • Pimentos: For this dish, you may either use iced pimentos, which are customary for this recipe and have a very mild, sweet flavor, or fresh pimentos. Another option is to finely cut up some high-quality roasted red peppers (either handmade or store-bought), which are absolutely my preferred option for this dish because their flavor is stronger and their flavor is somewhat smokier
  • Extra-sharp cheddar cheese: For the best flavor and texture with this spread, I highly recommend obtaining a good-quality block of extra-sharp cheddar and shredding it yourself. Traditionally, pimento cheese is prepared with a more orange cheddar, but I frequently make it with an aged white cheddar, which is equally great. Green onions: To give this spread a burst of brightness and freshness. (Alternatively, some finely chopped red onions, shallots, fresh chives, or a sprinkle of onion powder might be substituted.) A lot of Southerners will insist that pimento cheese be prepared with Duke’s mayonaisse, which is produced with egg yolks and no added sugars and, believe it or not, tastes fantastic! But, of course, you may use whichever container of mayonnaise you have on hand in the refrigerator. Pimento dip is best served with a dash of garlic powder and smoked paprika for added flavor, as well as salt and freshly ground black pepper to taste. Finally, I recommend taking the Southern route and sprinkling on as many shakes of Tabasco sauce as you like to give this cheese a little zip. (Alternatively, you may add some cayenne pepper or sliced jalapenos for more spice if you choose.)

How To Make Pimento Cheese:

As recommended in the recipe below, I normally just blend all of the ingredients in a mixing bowl until they are well incorporated, resulting in a little chunky pimento cheese consistency. You may also blend all of the ingredients together in a food processor or mixer until they reach your preferred consistency if you like it to be more puréed in texture.

Pimento Cheese Recipe Variations:

Consider the following entertaining variants, which you are encouraged to experiment with!

  • Pickles: To give this spread a little more zing, mix in a few teaspoons of pickle relish (or finely sliced pickles) before serving. Toss in some olives: To create Carolina-style pimento cheese, combine 1/4 cup chopped green olives with the remaining ingredients. Make the spread smokey and spicy by adding a tablespoon of finely chopped chipotle pepper in adobo sauce. Add bacon: Fry a couple slices of bacon until crispy and crumble them into the mixture to create bacon pimento cheese.

Ways To Use Pimento Cheese:

Pimento cheese is one of my favorite spreads and dips, and I serve it that way 99 percent of the time. However, there are a plethora of other wonderful ways to put it to good use, such as serving it with.

  • Crackers and chips: Growing up, we always had pimento cheese spread on Ritz, Club, or saltines crackers. However, it would be excellent served with whatever sort of crackers or chips that you choose. Pinch of pimento cheese on celery sticks: My grandmother used to spread pimento cheese on celery sticks for us, but it makes a fantastic dip for any sort of fresh vegetable dippers
  • To use on sandwiches and burgers, it may be spread over any style of sandwich or burger, but it’s especially good on grilled cheese. Baked potatoes:Believe me when I say. When you put a dollop of pimento cheese in the middle of a newly baked potato that has just come out of the oven, it’s magic. Deviled eggs:Pimento cheese is a terrific filling fordeviled eggs, and it is also delicious on its own.
