  • Make it dairy-free/vegan by using the following methods: Remove the feta from the recipe or substitute vegan feta. Preparation of hummus (optional) is required for this pita sandwich recipe. I like homemade hummus, but store-bought hummus would suffice! Despite the fact that these packed pitas are also delicious without hummus
  • Rather of pouring in a large amount of dressing all at once, start with a few tablespoons, mix the salad, taste, and add more if necessary.

A drizzle of the yogurt mixture, followed by a generous spoonful of the avocado mixture, should be placed on top of the chicken and contained within the pita pocket. It may be eaten cold, or grilled for 2 minutes on a sandwich maker or foreman grill to serve warm, if desired.

  • 1 tablespoonchopped fresh dill (or substitute12 teaspoondried)
  • 1 cupGreek yogurt
  • 12 teaspoon garlic powder
  • 1 tablespoonwhite wine vinegar

  • 1 tablespoon fresh ground pepper

  1. Cucumber should be peeled and diced. Slice the onion very thinly. Cut the cherry tomatoes in half and set them aside. Prepare the green pepper by dicing it. Chickpeas should be drained and rinsed. Place all of the veggies in a large mixing bowl or an airtight container (if you’re cooking it ahead of time)
  2. Add 1 tablespoon olive oil, 1 tablespoon white wine vinegar, 12 teaspoon kosher salt, and freshly ground pepper pepper to the mixing bowl with the veggies. Add in 34 cup feta cheese and mix well. Taste and make any necessary adjustments to the taste. This combination can be marinated for a short period of time if preferred, or it can be served immediately. If you’re using fresh dill for the yogurt sauce, cut just enough to make 1 tablespoon. Prepare the dressing by combining 1 cup Greek yogurt with 12 teaspoon garlic powder, 1 tablespoon chopped fresh dill (or 12 teaspoon dried), a splash of white wine vinegar, 14 teaspoon kosher salt, and freshly ground pepper in a small mixing bowl
  3. Set aside. Toss the salad mixture into the pita bread halves and press down with a slotted spoon to remove any excess moisture. Serve with yogurt sauce on the side.
