A grilled cheese sandwich is often the first dish that individuals learn to make when they first start cooking. It was the very first dish I learnt to prepare. Nine-year-old me would love it if I could chop off a few slices from the omnipresent large orange block of Velveeta in our refrigerator, smother Roman Supper bread with Promise margarine, and whip up the most delicious meal imaginable. Perhaps you were not raised on grilled processed cheese sandwiches on spongy sandwich bread. Alternatively, you may be familiar with the art of making grilled cheese but wish to improve your skills.

For Memorable Grilled Cheese, Good Cheese Matters

The first and most important piece of advice? Velveeta is not a product I would suggest. Those grilled cheese sandwiches from my youth remained in my memory as the pinnacle of grilled cheeses until I attempted to recreate one as an adult and discovered it to be utterly uninteresting. Our objective is to have ooey, gooey, melting cheese. When cheese is melted, hard cheeses such as parmesan do not become particularly oozy, while soft cheeses such as ricotta contain far too much moisture. Which cheeses are the most effective?

Grated cheese melts more evenly, and it also allows for more level coating of the bread. That means you can cram even more cheese into each and every mouthful! Furthermore, if you are combining a number of cheeses, grated cheeses will blend together more effectively. You don’t want to fiddle about with a cheese grater, do you? If you don’t want to, you can skip it. You’ll still end up with a grilled cheese sandwich as a result of this.

Bread for Grilled Cheese Sandwiches

Have you ever gone to the grocery store with the thought in mind, “I need to grab some bread just for cooking grilled cheese sandwiches?” I certainly haven’t! My family eats grilled cheese sandwiches not because of a lack of meal preparation, but rather because of a lack of time. That’s one of the things I love about them! Sandwich bread, sliced thinly, is a classic. Crusty artisanal bread is also a good option. Sandwiches made with bread that has an open, lacy interior allow too much cheese to pour through, whereas sandwiches made with bread that is excessively dense are leaden.

  • Sandwich bread made with multigrain, white, or whole-wheat flour

The Secret Ingredient for the Best Grilled Cheese

My cheesemonger acquaintance (yep, it was her again) was the one who convinced me to switch from butter to mayonnaise. It’s always spreadable, it produces a gorgeous golden-brown crust that is less likely to burn than butter, and it adds a subtle kick to dishes without overpowering them. Hellmann’s/Best Foods, as well as Duke’s, are two of my favorite brands. I haven’t tried Miracle Whip (which, by the way, isn’t truly mayonnaise), but I suspect it would be too sweet for this use. You may also create your own mayonnaise, which is almost as simple as preparing a grilled cheese sandwich.

The Best Pan for Grilled Cheese

The pan is equally as vital, if not more so, than the bread and cheese in the final product. A fragile skillet will result in inconsistent grilling of your sandwich. When using a pan that is too tiny, it is difficult to manage the sandwich. A 10-inch cast-iron pan works well for making one sandwich at a time. It’s not necessary to use a nonstick pan while making grilled cheese sandwiches because the sandwiches don’t actually stick to the pan. A cast-iron pan is my preferred cooking vessel.

Making More Than One Grilled Cheese at a Time

Using a 10-inch pan and grilling just one or two sandwiches at a time is more convenient for me than using a larger skillet. Unless you have an exceptionally big cooktop with many huge burners, it is difficult to achieve consistent heat distribution across a very large pan, resulting in pale (or burnt) areas on your sandwiches. Do you need to prepare a large number of grilled cheese sandwiches at the same time? Put it in the oven and see how it turns out:

  1. Place the bread pieces on a sheet pan, butter/mayo side down, and sprinkle cheese over each bread slice. Bake in a preheated 425°F oven until the cheese is bubbling
  2. Then seal the sandwiches and bake for another 5 minutes, or until they are toasted.

The Open Face Technique

For many years, I construct the sandwich and then cook it on a grill pan. However, I have discovered a new approach that I much like over the previous one. Open-face grilling is what we’ll name it. By cooking the cheese open-faced, it allows the cheese to melt more fully. There is a trade-off, though, in that you can only create one sandwich at once. However, if perfection is what you seek, this is the technique for you.

  • Place both slices of bread in the skillet, butter-side down, and cook until golden. Place half of the cheese on each piece and spread evenly. One slice should be inverted into the other after it’s halfway melted
  • Using a spatula, gently press down on the sandwich (this “marries” the sandwich and gives it a toastier, more compact structure)
  • Finish grilling as necessary until the cheese is melted and the bread is golden brown on both sides

Open-face grilling makes it simple to add accoutrements such as tomato slices or chutney to your meal midway through the cooking process. The partially melted cheese forms a link with the filling, which prevents it from rolling about the plate. Heating Your Skillet

Dress up Your Grilled Cheese!

I’m not a purist when it comes to grilled cheese, and I like to experiment with different toppings. Just be careful not to overfill it, or all of the goodies will fall out. What kind of treats, you ask? Here are a few ideas:

  • Prepared greens (kale, mustard greens, or spinach) (first press out any extra moisture from the greens). Fruits and vegetables: roasted red pepper, thin slices of apple or pear, tomato slices, roasted red pepper and tomato slices

Allow the cheese to melt for 2 to 3 minutes, or until it is almost completely melted but there are still some identifiable cheese bits visible. Sandwiches should be topped and flipped as follows: Remove the lid from the pan and place the other piece of bread on top of the sandwich (buttered side out). Squish the top a little to ensure that it sticks to the melted cheese. Toss the sandwich on its side. Continue to cook until all sides are toasted, as follows: Allow the sandwich to cook on the other side for another 1 to 2 minutes, or until it is toasted and golden brown. If the initial side of the sandwich wasn’t quite toasted enough for you, turn the sandwich over and toast until golden brown. Transfer to a serving plate: Sandwiches should be served on a platter and sliced into halves before being eaten right away

  • Grilled cheese made with olive oil: Instead of butter, use olive oil to grill the cheese. Grilled Cheese on Frozen Bread: If you plan to serve your grilled cheese on frozen bread, slightly toast it before constructing the sandwich. Put our skillet on the burner over medium heat to start the cooking process. We’re in desperate need of some bread. The sort of bread you use is entirely up to you; I’m making mine out of a “Texas Toast” style loaf of bread. You may use whole wheat bread, french bread, sourdough bread, and other types of bread. Then, using your softened butter, generously spread it over top. Butter, butter, butter. Alternatively, any butter replacement spread can be used if desired. Spraying it with olive oil can also suffice in this case.

Again, you may use whichever cheese you want to.

Step 3: Place and Cook

Then, lay one slice of bread on your pan, butter side down.

After that, add your cheese on top. Then, with the butter side facing up, place the other slice on top of the first. Cook that side for a few minutes more, or until it is well browned and crispy on the outside.

Step 4: Flip, Cook, and Serve

Now it’s time to turn it over. Take a look at how beautiful and golden brown it is. Then finish cooking that side. Once finished, transfer to a serving platter and enjoy!:) Mmmm, delectable!

Ingredients

  • 1 cup melted butter, divided
  • 6 tablespoons heavy cream 8 pieces sourdough bread
  • 3 teaspoons mayonnaise
  • 3 tablespoons finely shredded Manchego or Parmesan cheese
  • 8 tablespoons finely shredded Manchego or Parmesan cheese 1/2 cup shredded strong white cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup shredded Gruyere cheese
  • 4 ounces Brie cheese, skin removed and sliced
  • 1/8 teaspoon onion powder

Directions

  1. 3 tablespoons of butter should be spread on one side of each slice of bread. Bread should be toasted with the butter side down in a large skillet or electric griddle over medium-low heat until golden brown, about 2-3 minutes
  2. Remove from heat and set aside. In a small mixing bowl, combine the mayonnaise, Manchego cheese, onion powder, and the remaining 3 tablespoons of butter until well combined. In a separate bowl, combine the cheddar, Monterey Jack, and Gruyere
  3. Set aside. To assemble sandwiches, top toasted side of 4 bread slices with sliced Brie. Sprinkle the cheddar cheese mixture over the Brie in an even layer. On top of that, arrange the remaining bread slices so that the toasted side faces inward. Using a pastry brush, paint the outsides of each sandwich with the mayonnaise mixture. Place the bread and cheese in the same skillet and cook for 5-6 minutes on each side, or until the bread is golden brown and the cheese is melted. Serve as soon as possible
