“They Like That Soft Bread” — THE BITTER SOUTHERNER

New Fresh-O-Matics are readily available on the internet nowadays, despite the fact that pump-handle variants are practically difficult to come by. On the massive Knoxville-based restaurant supply website KaTom.com, there is an entire subsection dedicated to “SandwichDeli Steamers,” which lists 20(!) different options alongside the original, with prices ranging from $600 to $1,600 and suggested uses ranging from heating pasta to steaming clams, among other things. Most are shallow with large, square surfaces — the kind of thing you’d see a stoned undergrad manning at your local Chipotle, gassing tortillas — but there are also a number of purpose-built sandwich models in the mix.

Peter Lanois, a former chef who attended the University of Texas in the 1980s, explained the fundamentals of commercial kitchen economics to me: Starting in the 1950s, a kitchen with a flat-top grill, pizza oven, or even a deep fryer required the use of an industrial ventilation hood equipped with a fire suppression system to function properly.

When you factor in the initial cost of those larger appliances, your minimum equipment cost is well into the five-digit range, which is unlikely for a mid-century immigrant start-up and certainly unlikely for a neighborhood convenience-store owner today, who is already fighting a losing battle against grocery, gas-station, and fast-food chains.

  • A Fresh-O-Matic, a slicer, and a chilled prep table are all you need to get started for a few thousand dollars.
  • Instead of complaining, customers shrugged and ate their sandwiches from the empty shelves that had previously contained food.
  • Dennis Parton claims to have a steamer that has been in operation for 45 years; no other deli proprietors could believe it was still in operation.
  • I spoke with a number of casual aficionados, including my father and stepfather, who had spent years doing casual browsing on eBay in an attempt to track down antique models for their own personal usage and enjoyment.

In a similar vein to the informal group of people who keep ancient German diesels going on swapped parts and 50 years of healthy filth, Kitts is the guy who has a garage full of dead-stock bits and ends, the guy you contact when you’ve got a problem that is too enormous for your own inventiveness to address.

Everyone knows that his firm is called Kitts Carbonation Service, but no one remembers him working on soda fountains or draught lines or anything else other than Fresh-O-Matic machines.

Obviously, he covers the whole county of Knox, but he also has a documented presence in the neighboring counties of Union, Sevier, and Blount.

Although most people I spoke with assumed Kitts was in his 70s, they expressed some concern about his age and health.

The proprietor of a deli told me, “Every time something goes down, I pray Mr. Kitts is still alive when I call.” “I hope he lives to be 100 years old since there is no one else like him.”

Is it still feasible to cook them to the perfect temperature if you don’t have a professional-quality bun steamer?

In the event that you don’t have a steamer, you may still steam hot dog or hamburger buns using a variety of methods. Your burner, oven, or microwave may all be used to create a warm, steamy atmosphere that will have you and your guests begging for another helping. Whole-grain products should be your first choice when it comes to bread and buns, according to the American Academy of Family Physicians, because they contain the complex carbohydrates that will help you feel fuller faster and stay fuller longer, preventing you from overeating and assisting you in maintaining a healthy weight.

When purchasing hot dog or hamburger buns, be sure that whole grain is the first component on the ingredient list and that there is no added sugar listed in the list.

Steaming Hot Dog Buns

Steaming hot dog buns and hamburger buns isn’t difficult, but it is important to use caution because, unlike a bun steamer, which is designed specifically for the purpose of steaming bread, steaming your buns on the stovetop or in the oven may cause them to become soggy if done incorrectly or for an excessive amount of time.

  • Preparing a pot of water on the burner: Place a pot of water on the stovetop and fill it approximately a quarter of the way with water. When your steam basket is placed inside the pot, the water level should be slightly higher than the bottom of the basket (see illustration). Bring the water to a boil, then place the buns in the basket and cover the pot for approximately 30 seconds. Remove the buns and set them aside. Preparation in the oven: Preheat the oven to 350 degrees Fahrenheit before beginning.

Microwave: Using a microwave, heat for roughly one minute on high for one cup of water

Enjoy in Moderation

Hot dog buns and hamburger buns that are steaming will make your meal taste like a special event, which it should be because most health experts recommend that you consume hot dogs and hamburgers in moderation. As reported by the Cleveland Clinic, meals such as hot dogs and hamburgers, as well as the items that are offered with them, such as potato chips and mayonnaise-based salads, are often rich in calories and saturated fat. In the event that you’re managing your weight, you might substitute a lower-fat protein such as chicken breast or a veggie burger on your steamed bun in place of the fried chicken.

Leaving hot dogs out at room temperature for more than two hours is not recommended, and leaving them out for more than one hour when the temperature is above 90 degrees Fahrenheit is not recommended.

A hot dog should be chopped into little pieces when consumed by a kid younger than 4 years old in order to prevent choking. Keep these suggestions in mind to ensure that your hot dog and hamburger consumption is as healthy and safe as it is delicious.

To Steam or Not to Steam? – Panini Happy®

You are not deceived by your own sight. That’s a panini (or “panino” for you snobs) cooking in my microwave right now. And I’m willing to advise that you give it a shot at some point as well. I would have never imagined that adding steam to a sandwich, especially one that I wanted to be crispy, would have any advantage for me. An fascinating panini-making technique that a reader called Candace just brought to my notice is steaming, which is utilized in a prominent casual restaurant chain and that I had never heard of before.

This approach, in my opinion, is particularly appealing since it melts the cheese while also adding moisture to the ingredients of your sandwich.

Unfortunately, the exterior of the sandwich was also soggy and gummy (which was not wanted), but Candace’s advice to grill the sandwich after steaming seems to be a reasonable remedy to crisp things up a bit more.

I made three different versions of a prosciutto, fresh mozzarella, and sundried tomato tapenade sandwich (also known as Mario Batali’s Classic Panini): 1) grilled; 2) microwaved for 35 seconds; and 3) wrapped in a moist paper towel, microwaved for 35 seconds; and 4) grilled Sandwich1.Grilling panini is effective, as evidenced by my having made more than 50 sandwiches.

  • Crispy on the exterior, warm and melting on the inside, this dish is a winner.
  • Sandwich2.
  • Before placing the sandwich on the grill, I sprayed a little olive oil on the exterior to give it a little additional aid crisping up.
  • I had to keep going back and forth and taking bites from each one since it was difficult to tell which one I favored over the other.
  • I hadn’t even realized I wanted the interior of my panini to be soft and moist until it was too late.
  • It’s official: this was the most delicious of all three sandwiches.
  • Once again, the grilling resulted in everything being very crisp on the exterior.
  • The center of the steamed panini is hotter than the outside.
  • Will I be pre-steaming all of my panini sandwiches in the future?
  • I’ll probably steam rather than grill sandwiches that include fillings that need to keep their wetness – such as cheese, ham, chicken, and turkey – if I want to keep the moisture in the sandwich ingredients intact.

The discovery of another another way for creating excellent panini is a thrilling experience. Thank you very much, Candace, for bringing this to our attention!

How to Steam Food Without a Steamer Basket

When it comes to single-use tools, especially those that aren’t utilized very often, I am not a huge admirer of the concept at all. Particularly unpopular with me are single-use tools that are only sometimes utilized and take up a lot of storage space. In this list of “kitchen basics,” one of these products is the steamer, which is enormous and bulky and not frequently used yet is still included. Instead of spending $20 and taking up valuable shelf space, try one of these DIY steamers instead if you find yourself in need of one.

1. Build a Pie Tin Steamer

With just two reused aluminum pie pans, you can construct a surprisingly efficient steamer. To begin, pierce 12–16 holes in the bottom of each pie pans using a needle. Then, using a rolling pin, flatten one of the pie pans until it is completely flat. Make no effort to get it precisely flat; this is all about convenience, so simply run your rolling pin over the tin a few times to flatten it. You’re now ready to assemble your steamer’s components. Place the tin, which is physically sound, upside-down in a pot filled with a little amount of water.

You’ll have a beautiful steamer in operation as soon as you turn on the heat!

2. Use a Strainer or Colander

This steamer hack is as straightforward as they come. All that is required is that you place your meal in a wide kitchen strainer and set it on top of your pot of boiling water to cook. You may also use a colander instead of a strainer to do this. Image courtesy of James Ransom/Food52.

3. Repurpose a Cooling Rack

If you want to build a quick and simple steamer, simply place a cooling rack over the top of your pot of boiling water, arrange your contents on top of the cooling rack, and cover with aluminum foil. Remember to use a cooling rack with no gaps larger than the food you’re steaming, or else you’ll wind up with a bunch of cooked vegetables sitting at the bottom of your pot! 4. Use a PlateSome Foil

This recipe is easy to prepare and makes cleanup a breeze because the meal is served on a plate rather than a plate of utensils. To make a steamer, fill a large plate halfway with water, then set the plate (with contents) on top of the aluminum foil balls.

Cooking this dish is enjoyable, and it makes cleanup a breeze because the meal is served on a plate rather than a plate of croutons. To begin, you’ll need to select a plate that is oven-safe and is just a little bit smaller than the pot you’ll be working with.

Combination Steam Oven French Toast Sandwiches

One of the most common sales pitches for combination steam ovens is the promise that you will be able to prepare healthier meals more quickly and conveniently. This is true, but it is not what we will be discussing today, because cooking with steam offers benefits when preparing some of the most sumptuous and indulgent ‘treat’ foods, as well as when preparing some of the most nutritious and filling dishes. Consider the following: brownies, puddings, breads, and pastries – all of which may be baked effectively in a ‘dry’ oven but which benefit greatly from the addition of a little (or a lot) of steam throughout the baking process.

Check out this French Toast Sandwich made in a Combi Steam Oven.

Even though it appears to be no different from a standard ham and cheese toastie, you’d be mistaken – a combi steam oven transforms the sandwich into something that looks almost soufflé-like, without the anxiety-inducing whisking, folding, and praying over the oven that you’d have to do with regular soufflé.

We make French toast sandwiches for supper since it’s nearly too much for breakfast in our family, but I won’t hold it against you if you eat it at any other time of the day.

This recipe is just that.

  • White bread cut into 8 pieces A crusty white loaf of bread is what I reach for most often. Sourdough isn’t the best choice for this recipe since the thicker, denser crumb doesn’t absorb the liquid as effectively as regular bread. 2tbs ham, thinly sliced (I like it off the bone), dijon mustard, 16 slices (I prefer it off the bone)
  • Gruyere cheese (7.5 ounces) I slice it generously since this is a one-time recipe and I don’t want to waste any time halfway through
  • If you slice narrowly, you’ll use less. 6 big eggs
  • 12 cup whole milk
  • Salt and pepper for seasoning
  • 1 tablespoon butter for the fry pan
  • Activate the combined steam setting on your oven and set it to 4000F/2000C. If your oven has a variable steam setting, set it to 80 percent steam for best results. If this is not the case, don’t be concerned! Simply set your oven to combi steam at the appropriate temperature, and your oven will automatically determine the humidity level. Prepare a perforated baking pan by lining it with parchment (baking) paper. Make four sandwiches with ham and cheese (and mustard, if you prefer) and set them aside. I’m not going to go into great depth here since I’m confident you don’t need step-by-step directions for constructing a sandwich. In a broad, shallow dish large enough to accommodate a complete sandwich, whisk together the eggs and milk until well combined. Season with salt and pepper if desired. A small amount of butter to coat the bottom of a fry pan should be heated over medium high heat. While the pan is heating, soak 2 of the sandwiches in the egg mixture until the mixture has been absorbed completely through the bread (but not so much it falls apart). You’ll have to be very careful while turning them over to ensure that all sides are moistened. Transfer the wet sandwiches to a frying pan and cook for a minute or two on each side until browned, but don’t bother about cooking them completely through. Similarly prepare the remaining sandwiches, moving the first two to the lined tray after they have browned on the bottoms
  • Transfer the remaining 2 sandwiches to the baking sheet and bake for 10 minutes, or until they’re puffy, oozy, and golden all over, turning halfway through. Serve as soon as possible
  1. Activate the combined steam setting on your oven and set it to 4000F/2100C. Utilize 80 percent steam if your oven has multiple steam settings. But don’t be concerned if this is not the case! To find out the humidity in your oven, simply set it to combi steam at the appropriate temperature and leave it to do the work. Lay parchment (baking) paper on the bottom of a perforated baking pan
  2. Make four sandwiches with ham and cheese (and mustard, if desired). Forget about the specifics here
  3. I’m confident you don’t require step-by-step instructions on how to assemble a sandwich. In a broad, shallow dish large enough to accommodate a complete sandwich, whisk together the eggs and milk. Sprinkle salt and pepper to taste
  4. Place a fry pan over medium-high heat and add a little amount of butter to coat the bottom of the skillet
  5. Seep 2 sandwiches in egg mixture while the pan is heating, allowing the egg to soak through to the other side of the bread (but not so much it falls apart). If you want to get all sides moist, you’ll have to turn them gently. Transfer the wet sandwiches to a frying pan and cook for a minute or two on each side until browned, but don’t worry about cooking them through completely. Repeat the process with the remaining sandwiches, moving the first two to the prepared baking sheet after they’ve browned. Then, transfer the remaining 2 sandwiches to the baking sheet and bake for another 10 minutes or until they’re puffy, gooey, and golden all over. Instantaneous service
