One of the most common sales pitches for combination steam ovens is the promise that you will be able to prepare healthier meals more quickly and conveniently. This is true, but it is not what we will be discussing today, because cooking with steam offers benefits when preparing some of the most sumptuous and indulgent ‘treat’ foods, as well as when preparing some of the most nutritious and filling dishes. Consider the following: brownies, puddings, breads, and pastries – all of which may be baked effectively in a ‘dry’ oven but which benefit greatly from the addition of a little (or a lot) of steam throughout the baking process.

Even though it appears to be no different from a standard ham and cheese toastie, you’d be mistaken – a combi steam oven transforms the sandwich into something that looks almost soufflé-like, without the anxiety-inducing whisking, folding, and praying over the oven that you’d have to do with regular soufflé.

We make French toast sandwiches for supper since it’s nearly too much for breakfast in our family, but I won’t hold it against you if you eat it at any other time of the day.

This recipe is just that.

These sandwiches, with oozy, gooey middles and a fluffy, almost souffle-like French toast shell, are among of the greatest you’ll ever create in your home. If this is not the case, don’t be concerned! Simply set your oven to combi steam at the appropriate temperature, and your oven will automatically determine the humidity level. Prepare a perforated baking pan by lining it with parchment (baking) paper. Make four sandwiches with ham and cheese (and mustard, if you prefer) and set them aside. I’m not going to go into great depth here since I’m confident you don’t need step-by-step directions for constructing a sandwich. In a broad, shallow dish large enough to accommodate a complete sandwich, whisk together the eggs and milk until well combined. Season with salt and pepper if desired. A small amount of butter to coat the bottom of a fry pan should be heated over medium high heat. While the pan is heating, soak 2 of the sandwiches in the egg mixture until the mixture has been absorbed completely through the bread (but not so much it falls apart). You’ll have to be very careful while turning them over to ensure that all sides are moistened. Transfer the wet sandwiches to a frying pan and cook for a minute or two on each side until browned, but don’t bother about cooking them completely through. Similarly prepare the remaining sandwiches, moving the first two to the lined tray after they have browned on the bottoms
  • Transfer the remaining 2 sandwiches to the baking sheet and bake for 10 minutes, or until they’re puffy, oozy, and golden all over, turning halfway through. Serve as soon as possible
