To begin, tear a square of parchment paper in half and fold one corner down to the other corner to form a huge triangle with the other corner. Any big lettuce leaves will suffice for the lettuce garnish. I, on the other hand, favor Romain or iceberg. Despite the fact that I used Romain for the photographs, Iceberg does tend to have a little more crunch.
