Thick-cut bacon, as opposed to ordinary bacon (at least, that’s where I tend to go most of the time), cooked to the precise degree of crispness, is the key to this dish. You may use any cheese you like (cheddar, Monterey jack, brie, or goat cheese) and brown it until the cheese is melted and bubbly. To build the BLTs, gently mayo one side of each of the remaining four slices of bread and place them in the pan for 1 to 2 minutes, or until the cheese begins to melt slightly.

Place 4 of the toast slices, browned side down, on a cutting board and set aside. Sprinkle each piece of bread with a pinch of salt and pepper, then top each slice of tomato with three half slices of bacon and a couple of leaves of lettuce, if desired.
