  • I use tuna packed in water, either chunk light tuna or albacore tuna. Despite the fact that it is more costly, I believe the tuna in pouches tastes better and requires less preparation time than tuna in cans
  • Any form of cheese can be used in this recipe. Swiss cheese is my personal preference, but American or Provolone are also excellent choices. If you want a spicy tuna melt, add a few minced pickled jalapeño peppers to the mix. Preparation of the tuna salad can be done ahead of time or right before assembling the tuna melts. I find tuna to be sufficiently salty, so I do not season my tuna salad with more salt, but you may like to do so. The addition of a few tomato slices to my sandwich is optional

Place a third of the tuna mixture on one side of the bread that has not been buttered, then top with tomato slices and cheese. Place a second slice of bread on top, with the buttered side facing up
  • Repeat. Make two additional sandwiches by repeating the process. Using a large nonstick skillet or griddle, cook the ingredients over medium heat. Cook the sandwiches until the bottoms are golden brown, then flip them over and continue to cook until the cheese is melted, reducing the heat if the bottoms are becoming too browned. Using a knife, cut in half and serve

Ingredients:

  • 1 (6.4 oz.) Pouch or 2 (2.6 oz.) Pouches or 2 (5 oz.) Cans -Chunk Light or Albacore White Tuna (if using cans, chunked and drained)

  • 1 8 pieces of bread
  • 1 hard boiled egg, diced
  • 2 teaspoons lemon juice
  • 1 1/2 cups chopped celery
  • 2 tablespoons sweet pickle relish
  • 1 teaspoon lemon pepper spice
  • Lettuce leaves, curly-leaf
  • 1 tablespoon mayonnaise

Directions:

  • In a medium-sized mixing basin, add all of the ingredients except the bread
  • Thoroughly blend. Allow many hours to pass. Line four pieces of bread with lettuce
  • Top each with one-fourth of the tuna mixture
  • And cover with the remaining slices of bread.
