Allow the roast to rest for at least 15 minutes at room temperature before searing it. Add salt, pepper, and onion powder to the roast and season well. Cook over medium heat with olive oil in a skillet. In a skillet, brown the roast on both sides. Crock pot the roast till done. Pour beer over the roast after you’ve sprinkled the au jus package over it. Cover with the lid and set the timer for 8 hours on low. Take off the cover and transfer the meat to a serving platter, shredding the meat as you go along.
Cook under a low heat for 3-4 minutes, or until the rolls are golden brown, brushing them with the sauce.
Return the dish to the broiler for a few minutes, just until the cheese begins to melt; Freshly cut parsley may be used to decorate sandwiches.
Sandwiches should be served with au jus drained off the meat.
