  • 3/4cupchicken broth (ONLY FOR INSTANT POT DIRECTIONS)

For Sandwiches:

  • Pineapple that has been cored and diced
  • 1 packaged slaw mix
  • 1/2 cup fresh cilantro, chopped
  • 1 teaspoon fresh jalapeo*, minced
  • 13 ounces Lighthouse Coleslaw dressing
  • 6 brioche buns

SLOW COOKER:

  • In a small mixing bowl, combine the paprika, brown sugar, cumin, garlic powder, onion powder, cayenne pepper, and kosher salt until well combined. Rub the spice mixture all over the chicken breasts, on both sides, and set aside. Pour the apple cider vinegar and water into a slow cooker. Cook on high for 3 hours or low for 5 hours, depending on how much chicken you have. When the chicken is tender, shred it with two forks and place it back in the slow cooker. Pour in the BBQ sauce and mix until everything is well combined.

INSTANT POT

  • Chicken breasts should be placed in the Instant Pot. In a small mixing bowl, combine the paprika, brown sugar, cumin, garlic powder, onion powder, cayenne pepper, and kosher salt until well combined. Half of the spice should be sprinkled over the tops. Using the other side of the breasts, sprinkle with the remaining spice
  • Combine the water, vinegar, and 3/4 cup chicken stock in a large mixing bowl. Preparation time is 7 minutes at HIGH PRESSURE (10 minutes if chicken is frozen). Allow for a 5-minute natural release before releasing the remaining pressure quickly. Remove the cover and ladle off 1/2 cup of the liquid to be thrown away. For Sandwiches:

  • Grill pineapple slices for about 4 minutes each side, or until the pineapple begins to brown on both sides. Alternatively, you may set the pineapple on a baking sheet and broil it for 4 minutes per side. In the meantime, combine the slaw mix, cilantro, and jalapenos in a large mixing bowl. Pour in the Litehouse Coleslaw Dressing and whisk well to blend the flavors. Distribute the pineapple, Cilantro Jalapeno Coleslaw, and more BBQ sauce on the buns of the sandwiches.
