Stir well to ensure that everything is well-combined. Bring the remaining two cans of beans, as well as the broth and vinegar, to a slow boil in a large pot. Cook for 20 minutes on low heat. The base of this dish is a pork tenderloin that has been marinated in a mixture of olive oil, citrus juices, herbs, and spices for many hours. Perfectly grilled pork is finely sliced after it has been cooked to perfection. Using a split loaf of Cuban bread, arrange layers of Swiss cheese, ham, pork tenderloin, pickles, and mustard on top of each other to form a sandwich. They are grilled and pressed, which results in a very crispy outside and a gooey melting inside, as shown in the photos.

Grilled Cuban Sandwich (Sandwich Cubano)

Her festive Cuban party menu for Epicurious includes this dish, which is a fantastic way to use up leftover grilled pork from a previous barbecue. As soon as someone learns about my Cuban heritage, the question of whether I make a good Cuban sandwich follows suit. It’s hardly surprising, given the recent emergence of Cuban sandwiches on menus around the country.

While several have come close to recreating the actual thing, I believe the majority of them fall short. As a result, here is a step-by-step tutorial to making an authentic Cubano sandwich at home. The leftovers from your Cuban pig roast are also perfect for this dish!

Ingredients

This recipe makes 81 loaves Cuban bread that has been sliced lengthwise. 3 tablespoons yellow mustard, or to taste, 1/2 stick (1/4 cup) unsalted butter, melted 1 1/2 pounds boiling ham, sliced1 1/2 pounds roasted pork, sliced1 pound Swiss cheese, sliced1 cup dill pickle chips, or to taste1 1/2 pounds boiled ham, sliced1 1/2 pounds roast pork, sliced

Assemble the sandwich

Spread 2 tablespoons of butter over one half of the loaf of bread and a thin coating of mustard on the other half of the loaf of bread. Place 1 to 2 layers of ham, pork, cheese, and, finally, pickles on the buttered bread, and then top with the mustard-spread bread to complete the sandwich.

Wrap the sandwich in foil

Wrap the sandwich entirely in aluminum foil, smearing the leftover butter on the outside of the sandwich.

Press and grill the sandwich

Close the cover of your grill and turn the heat up to high (550°F). Remain on high heat for at least 15 minutes before decreasing the heat to medium-high (450°F).

Step 4

In order to make the sandwich more flat, push it down with your hands before cooking it. Place the flattened and wrapped sandwich on the grill and cover with a brick, grill press, or any other heavy, heat-resistant item to keep it from falling apart. Close the cover and cook for 5 to 6 minutes per side on a hot grill.

Step 5

Remove the foil-wrapped sandwich off the grill and cut away any excess wrapper. Cook for about 2 to 3 minutes each side, or until both slices of bread are crispy and golden brown, before removing from the grill and cutting into pieces.

Slice and serve

Remove the sandwich off the grill and cut it into tiny sandwich wedges by slicing it diagonally (triangles). Placing the dish on a big plate and serving while still hot is recommended.
