Healthier Fried Fish Sandwich {30 Minutes}

If you believe that cooking a healthy fish fillet sandwich at home is an insurmountable challenge, you are mistaken. With just 30 minutes of prep time, you can have this fried fish sandwich with homemade tartar sauce on the table in under 30 minutes. It’s so amazing that it puts McDonald’s filet-o-fish to shame. For me, eating fast food was not something I did very often as a child, so it was a memorable experience when I had my first meal at McDonald’s. Surprise, surprise: my grandmother Mary Jane, who was a home chef who prepared everything from scratch and insisted on me eating all of my vegetables, was the one who first exposed me to the fast food industry.

However, on that particular day, and on every subsequent visit to Mickey D’s, we did not order burgers.

Evidently, I’m not the only one.

As a matter of course, I always had to ask for additional pickles on my sandwich since certain things never change.

And that’s how Lauren was able to alleviate my desires for fish sandwiches by creating a completely amazing meal that we will undoubtedly make again and again.

How to Make a Fried Fish Sandwich That Feels Almost Healthy

In most cases, if I’m given the option of choosing between grilled, baked, or fried, I’ll go for the healthier options such as baked or grilled instead. Although there are exceptions to every rule, I usually choose fried fish for my tacos and will indulge in fried chicken every now and then since, after all, this gal has to eat too! The steps Lauren outlines for preparing this meal make me completely comfortable with the fact that the fish is fried. First and foremost, there is no cloyingly thick batter in this recipe.

  1. Saltines that aren’t salted?
  2. Using buttermilk to moisten the panko breading, the fish is tenderized while yet being light and airy in texture.
  3. Second, the fish is cooked fast in 350°F oil, which helps to keep things healthy-ish for the most part.
  4. I choose grapeseed oil because of its high smoke point, which makes it excellent for frying and assembling a sandwich that takes only a few minutes.
  5. The fish should be flaky and opaque when the temperature reaches 145°F.
  6. This allows air to travel all the way around the fish, ensuring that it remains crispy on all sides throughout.
  • A wonderfully soft, buttery brioche bun that has been warmed on a baking sheet in the toaster oven so that the top of the bun remains soft, or you may microwave it for 15-20 seconds instead of warming it in the oven. The original recipe called for brioche slider buns, but I couldn’t locate any, so I used a regular-sized bread and made three sandwiches instead of four sliders. On the bottom bun, a tiny piece of American or cheddar cheese is melted and served. Tartar sauce mixed with sweet relish to give it a tangy zip is delicious. Use Greek yogurt instead of mayonnaise to further decrease the overall burden. Slices of dill pickles with a tangy kick. There are always more pickles. As a significant twist on Lauren’s original recipe, I’d suggest adding some sliced tomato, red onion, and shredded lettuce to the mix. If you’re really looking to boost your fish sandwich game, you could also try adding some sliced red onion and shredded lettuce to the mix.

Best Fish for a Fish Sandwich

Generally speaking, any skinless, mild white fish will suffice. The halibut I chose here is at the top of my price range, and the quality demonstrates why, but a more affordable fish such as cod or grouper would be my first choice if the money allowed.

Healthy-ish Fried Fish Sandwich

Saltine crackers that have been finely crushed and combined with panko bread crumbs give the crunch for these simple fried fish fillets that are quick and easy to prepare. The original recipe asked for double the number of ingredients for the buttermilk and the saltine mixture, but we ended up with a lot of leftovers, so I reduced those amounts to the proportions shown above.

To ground the crackers, place them in a gallon-sized zipped bag, squeeze out all of the air, seal the bag, and gently press the crumbs with a rolling pin until they are a fine meal. Servings 3 regular-size sandwiches or 4 sliders are served.

  • For the Tartar Sauce, combine 1 cup mayonnaise, 1 tablespoon sweet pickle relish or sweet onion relish, 1 tablespoon chopped onion (yellow or green onion), 1 tablespoon lemon juice, 1/4 teaspoon kosher salt, and 1/4 teaspoon freshly ground black pepper in a mixing bowl until well combined. In relation to the Fish Sandwiches
  • Halibut filets (if making sliders, use 4 3-ounce halibut fillets)
  • 1 teaspoon lemon juice
  • 1/2 cup buttermilk
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 cup finely-crushed unseasoned saltine crackers
  • 1/4 cup panko bread crumbs
  • 1/2 teaspoon Old Bay seasoning
  • 2 6-8-ounce skinless boneless halibut filets (if making sliders, use 4 3-ounce halibut fillet Grapeseed or canola oil can be used for deep-frying. 3 brioche buns or 4 slider buns are served. Slices of Cheddar cheese
  • Slices of dill pickles
  • To make the Tartar Sauce, combine the mayonnaise, sweet relish, onion, lemon juice, kosher salt, and pepper in a medium-sized mixing bowl until well-combined. Make sure to refrigerate for at least 30 minutes to allow the flavors to meld. In relation to the Fish Sandwiches
  • Cut the fish fillets into pieces that are 3-4 ounces in weight. Squeeze the lemon juice over the fish fillets and serve immediately. In a small dish, whisk together the buttermilk, salt, and pepper. On a large dish, combine the crushed saltine crackers, panko bread crumbs, and Old Bay seasoning
  • Mix well to combine. Heat 2 inches of oil in a large Dutch oven until a deep-fry or candy thermometer reaches 350°F, about 15 minutes. One piece of fish at a time, dunk it in the buttermilk, shake out any excess, then immerse it in the saltine mixture and place it on a plate or small baking sheet to dry. Repeat the process with the remaining fish pieces. Fill the pot with a few fish pieces at a time, being cautious not to overcrowd the pan with them. Cook for 2 minutes on each side, or for 2 minutes on each side if the fillets are taller than the oil, fry for 2 minutes on each side until golden brown. Then, while the fish is still hot, transfer it to a wire rack set over a baking sheet or something similar to collect any dripping oil and season with kosher salt while it is still hot. Preheat the broiler or a toaster oven while the fish is cooking. Place the tops and bottoms of the brioche buns on a baking sheet and top each of the bottom buns with a piece of cheese. Bake for 15 minutes. Bake for 2-3 minutes, or until the cheese is slightly melted and the buns are warm and toasty
  • Remove from oven and set aside. To make the sandwiches, top the bottom bun with the melted cheese, pickle slices, and the halibut, then smear the top bun with tartar sauce and top your sandwich with the other ingredients.

You want to keep the temperature of the pan fairly consistent while the cod is cooking, so avoid packing the pan with too many pieces at once (which will bring down the temperature). If the oil is flying everywhere and the temperature appears to be too high, you can reduce the heat a little further.

If you’re using a deep-fryer or a deep-fry thermometer in your Dutch oven, you’ll want to keep the temperature consistent at roughly 375 degrees F throughout. It is acceptable for the temperature to fall below 350 degrees F, but strive to maintain it at least around that temperature.

How to Know When Fried Fish is Done

We can safely assume that if your oil is the proper temperature, when the fish is golden brown and the crust is flawlessly flaky, the fish will be perfectly soft and cooked through.
