  • A 2-3 pound beef chuck roast or rump roast that has been trimmed of superfluous fat (I’ve also used a boneless bottom round for a leaner alternative)
  • 4 – 6 rolls, nothing too soft or it would break apart once it is coated in the sauce
  • 3 cups low sodium beef broth
  • 14 cup Worcestershire sauce
  • 2 tablespoons extra virgin olive oil
  • 2 yellow onions, quartered and thinly sliced
  • 3 cloves garlic, chopped
  • 1 bay leaf
  • Salt and pepper
  • 12 pieces cheese (provolone, swiss, havarti or monterey jack)
  • 8-12 slices tomato sauce
  • Season your roast with salt and pepper to taste. Combine the beef broth and worcestershire sauce in a large glass measuring cup and put it aside. Heat the oil in a large cast iron pan, dutch oven, or the sauté function of your Instant Pot over medium-high heat until shimmering. Add the meat and sear on both sides until a good brown crust has formed on each side. Transfer the beef to a slow cooker if you’re using one, or take the meat from your Instant Pot and continue with the recipe. Heat to medium and, using the same saucepan that you browned the meat in, add the sliced onions and simmer for 5 minutes, adding additional oil if required, until the onions are translucent. Toss in the minced garlic and simmer for another minute or two until fragrant. Pour a couple tablespoons of the beef broth mixture into the saucepan with the onions and, using a wooden spoon, scrape up all of the browned pieces from the bottom of the pan (this will give a lot of flavor to the dish)

Slow Cooker:

  • In a large mixing bowl, combine the onion mixture and any collected liquids. Transfer to a slow cooker (with the meat) and stir in the remaining broth and bay leaf until well combined. Cook the beef in your slow cooker on high for 3-4 hours or low for 5-6 hours, or until it is extremely soft, according to package directions. Taking the meat to a chopping board, finely slice it (against the grain) or shred it, and then set it aside. Carefully drain the juices from the slow cooker through a fine mesh strainer into a large mixing basin (this is your au jus). Remove the onions from the sieve and toss them aside
  • Remove and discard the bay leaf. Return the cut meat and onions to the slow cooker and turn the heat down to low. Season the meat with salt and pepper to taste after pouring on a little amount of au jus to moisten it. Keep the remainder of the au jus aside for dipping. In order to make the au jus last longer, you can add a small amount of beef stock to the pan while cooking. Toast your buns, then stuff them with meat and onions before topping them with cheese of your choosing. In a 375° oven or under the broiler until melted, melt the cheese until it is completely melted. Serving it with the au jus on the side for dipping is recommended.

Instant Pot:

  • In a large mixing bowl, combine the onion mixture and any collected liquids. Transfer to a slow cooker (with the meat) and stir in the remaining broth and bay leaf until well blended. Make sure the beef is very soft by cooking it on high for 3-4 hours or on low for 5-6 hours in your slow cooker. Taking the meat to a chopping board, finely slice it (against the grain) or shred it, and setting it aside
  • Placing a fine mesh strainer over a big mixing bowl, gently transfer the fluids from the slow cooker through the sieve and into the large mixing dish (this is your au jus). Remove the onions from the colander and throw away the bay leaf
  • Set the onions aside and continue cooking. In a large mixing bowl, combine the cut beef and chopped onions. Season the meat with salt and pepper to taste after pouring on a little amount of au jus to moisten the meat. Make a dipping sauce with the remaining au jus and serve it alongside the meat. In order to make the au jus last longer, you can add a small amount of beef stock at the end of cooking. Grill or toast the buns, then stuff them with the meat and onions before topping them with the cheese of your preference. In a 375° oven or under the broiler until melted, melt the cheese. As an accompaniment, serve with the au jus on the side.
