The seasoning

You’ll really want to start with the Everything Bagel Seasoning first, because it’s going to be the most flavorful. It’s discouraging to complete the sprout sandwich and be ready to eat it, only to find that you don’t have the finishing touches to make it spectacular. It should be referred to as the Everything Everything Seasoning instead of the Everything Everything Seasoning because it can be used on so much more than just a bagel. It is simple to prepare using ingredients you probably already have in your cupboard, and I like to make a large quantity that lasts for a long time.

Here is the “everything bagel seasoning” recipe I use:

2 teaspoons each of black sesame seeds, poppy seeds, and white sesame seeds, toasted in a drycast iron pan, until the sesame seeds are golden brown and the seeds have burst. When they do, you’ll be able to see them hop into the skillet. Remove the pan from the heat. 2 tablespoons onion flakes and 2 teaspoons sea salt should be added at this point.   • 4 pieces whole wheat bread
  • 2 cups gently packed fresh sprouts

  • 1 teaspoon Sriracha
  • 1 ripe avocado

Wait until you’ve finished making the dressing and other sandwich components before you start on them. To prepare the spicy Russian dressing, whisk together the mayonnaise, relish, ketchup, and sriracha in a small mixing bowl until thoroughly combined and smooth. Season with salt and pepper to taste, then set it aside. Remove the avocado from the heat and set it aside in a small mixing dish with the salt
  • Drain and blot dry the cucumber and carrot slices with a paper towel after they have been sliced. Place the veggies, along with the tomato, in close proximity to your work area. To construct the sandwiches, lay 2 pieces of the bread on a cutting board and spread with the avocado from edge to edge, spreading it generously from the center out. Fold the carrot slices over the avocado slices, then fold the cucumber slices over the carrot slices, forming a thick and equal layer as shown in the photographs. (You may have a few slices left over from the previous night.) Place the tomato on top of the veggies in a uniform layer, and then sprinkle the sprouts on top of that. To assemble the sandwiches, spread the remaining 2 pieces of bread with the spicy Russian dressing and place them on top of the sandwiches. If you want to cut them in half, use a very sharp bread knife and a delicate sawing motion to do it. Alternatively, you may serve them whole and with lots of napkins.
