Keeping and Freezing: Store the toppings, bread, horseradish cream spread, and buns in separate plastic wrap-lined containers in the refrigerator for up to 1 week. Unfortunately, the components in this recipe will not freeze well. This sauce is fantastic on a variety of other foods than sandwiches, so be sure to experiment with it on various types of sandwiches, such as those made with chicken, turkey, or ham. Every 6 to 7 minutes or so, I baste the onions with the balsamic mixture to help increase the taste and caramelize them a little bit more.

For the Cooked Vegetables:

  • 1/4 cup balsamic vinegar
  • 1 teaspoon sugar
  • 1 thinly sliced russet potato
  • 1 thinly sliced sweet potato
  • 4 tablespoons olive oil
  • 2 peeled and thinly sliced shallots
  • 1/4 cup balsamic vinegar
  • Salt and freshly cracked pepper to taste

For the Cream Sauce:

  • 1/4 cup balsamic vinegar
  • 1 teaspoon sugar
  • 1 thinly sliced russet potato
  • 1 thinly sliced sweet potato
  • 4 tablespoons olive oil
  • 2 peeled and thinly sliced shallots
  • 1 tablespoon Kosher salt and freshly cracked pepper to taste

For the Sandwich:

  • 2 pounds of thickly sliced roast beef
  • 8 Kaiser buns cut and toasted
  • 4 cups of arugula leaves
  • 2 cups of kale microgreens
  • 4 very thinly sliced radishes
  • 2 pounds of thickly sliced roast beef
  • The oven should be preheated at 400 degrees. Cooked Vegetables: Spread the potatoes on sheet sheets coated with parchment paper and sprinkle with 3 tablespoons of olive oil, seasoning with salt and pepper
  • Bake for 30 minutes at 350 degrees F. Using a separate sheet tray coated with parchment paper, spread out the shallots and in a small mixing bowl, whisk together the remaining 2 tablespoons of olive oil, balsamic vinegar, and sugar
  • In the next step, brush the shallots with the mixture and put all of the baking pans in the oven
  • 20 minutes, or until the potatoes are gently browned and cooked, is a good estimate. Cook the onions for 25 minutes, baste them with the balsamic mixture every 6 to 7 minutes, until they are translucent. Sauce à la crème: In a medium-sized mixing bowl, whisk together all of the ingredients until well incorporated, then set aside to cool
  • To assemble the sandwich, spread a layer of the cream sauce on the bottom of a toasted Kaiser bun and top with some arugula leaves before cutting into slices. Continue with the steak, followed by the potatoes (both russet and sweet), a few sliced radish and kale (optional), and some balsamic shallots (optional). Finally, add the other toasted Kaiser bread to finish it off. Serve

NOTES FROM THE CHEF:

  • Don’t allow the bread selection restrict your options or your ability to be creative. To make things easier, you can use whichever type of bread you choose. For the roast beef, I’m a major lover of anything that is natural, organic, and free of filler protein
  • However, I’m not a huge fan of anything that is high in fat. Make sure to save part of the roast prime rib for a roast beef sandwich whenever you cook it. This horseradish cream is fantastic on a variety of other foods besides roast beef sandwiches, so be sure to experiment with it on other sandwiches, such as those with chicken, turkey, or ham.
