Surprise, surprise: my grandmother Mary Jane, who was a home chef who prepared everything from scratch and insisted on me eating all of my vegetables, was the one who first exposed me to the fast food industry.

Which Type of Fish for Fried Fish Sandwiches?

Fry the cod in your choice of oil: peanut oil, vegetable oil, or canola oil. Peanut oil is my preferred cooking oil since it is inexpensive, has a high smoke point, and does not impart any taste to the fish.

Step 1: Allow Fish to Come to Room Temperature

Temperature for Fried Fish

When frying the fish, you don’t need to use a thermometer. Instead, when the oil is heated (but not smoking), put a drop of water into the pan and wait for it to sizzle. If the water sizzles, the oil is hot enough for the fish to cook. You want to keep the temperature of the pan fairly consistent while the cod is cooking, so avoid packing the pan with too many pieces at once (which will bring down the temperature). If the oil is flying everywhere and the temperature appears to be too high, you can reduce the heat a little further.

It is acceptable for the temperature to fall below 350 degrees F, but strive to maintain it at least around that temperature.

How to Know When Fried Fish is Done

We can safely assume that if your oil is the proper temperature, when the fish is golden brown and the crust is flawlessly flaky, the fish will be perfectly soft and cooked through. The overall cooking time in the frying oil is around 7 minutes in most cases. Fish is done when it flakes easily when pierced with a fork and no longer has a transparent appearance to it.

When properly cooked, deep-fried fish will float to the surface of the water. If you want to use an instant-read thermometer, the Food and Drug Administration (FDA) of the United States recommends that cooked fish be cooked to a safe temperature of 145°F.

Keep the Fried Fish Warm

Never use aluminum foil to keep your hot fried fish warm. This retains steam and moisture, causing your fish to get soggy as a result. Instead, pat the fish fillets dry with paper towels before seasoning with salt and baking on a baking pan at 200 degrees F. Meanwhile, you may continue frying the other batches of fish fillets, which will help to keep them warm (without overcooking them).

When to Season Fried Fish

Just before breading the fish, I like to season it with salt and pepper to taste. Then, while the fish is still warm from the fryer, you may season it with a little extra salt and pepper, if you choose, before serving. By including cayenne pepper or herbs of your choosing into the flour mixture, you may enhance the flavor of this dish even more.
