The Chipped Ham Barbecue Sammich, how I love thee. A Pittsburgh institution–much like the Turkey Devonshir or the enormous sandwiches from Primanti Bros.–this sandwich is a classic. Sometime early this month, for no apparent reason, I developed a yearning for Chipped Ham (also known as Chip Chop Ham) barbecue. It was strange because I hadn’t eaten one in a long time and didn’t remember being a huge fan of them when I was younger. I vaguely recall my mother’s recipe, which consisted of just chopped ham cooked in a pan with water, Heinz ketchup, and Worcestershire sauce, among other ingredients.

It has to be more complicated than that.

So I did some testing in the kitchen and came up with the following recipe: Sandwiches with Chipped Ham and Barbecue Sauce Isaly’s chopped ham, if available, otherwise any deli ham would do) 1 12 pounds chipped chopped ham 1 small onion, coarsely chopped (about) butter (4 tablespoons) that hasn’t been salted 2 quarts of ketchup vinegar (one-third cup) 12 cup of water 2 tablespoons brown sugar (optional) 2 tablespoons yellow mustard that has been prepared 4 tablespoons pickle relish (sweet or sour) Worcestershire sauce (about 2 teaspoons) 8 hamburger buns (or whatever number of buns you like).

So here’s what I came up with as a full meal: quick, simple, and reasonably priced. All that I needed to purchase was the ham and the buns, which I already had in my pantry. I’m confident that the next time I’m homesick, I’ll have this recipe on hand to make me feel better.

Directions:

Order the Ham – Although the original “chip chopped” ham was made with pressed ham, you can order up any ham at your deli for this sandwich. Note: Even if you usually order the more expensive black forest or baked Virginia ham, don’t be afraid to try the less expensive or “on sale” hams for this sandwich. Here’s how to do it. Simply tell your deli person to shave the ham razor thin. Tell him (or her) not to be afraid to allow the ham to break up into pieces. The deli person is actually “chipping” the meat against the commercial meat slicer blade.
