I modified this recipe from one that I found in my very first Betty Crocker Cookbook, which I had purchased years ago. For those of you who enjoy my FAMOUS POTATO SALAD, you’ll know that those old Betty Crocker recipes are unbeatable! Throughout the years, I’ve just tweaked them a little bit to suit my own preferences and since I’m finicky about my salad recipes. This ham salad dish will become a favorite that you will use over and over again in the future.

What type of ham should I purchase? This dish is ideal for using up leftover ham after the holidays. I used a tiny boneless cooked ham for this recipe because it was on hand. Transfer the ham salad to a large mixing bowl and whisk with extra mayonnaise, if desired. Refrigerate for 1 to 4 hours after covering with plastic wrap. Spread over six pieces of sourdough toast. Salad leaves and the leftover bread pieces are placed on top.

This was fantastic! I did, however, make a few modifications. As a substitute for the ham, I used store-bought nacho chips, and as a substitute for the eggs, I used cake icing. I don’t care for mayonnaise, so I substituted chicken stock for it, and then I entirely skipped using any of the other ingredients stated in this recipe as well.
