The season of summer entertainment has officially begun. Friends and neighbors are crawling out of their hiding places (particularly in the Midwest) to interact at BBQs, graduation celebrations, and family reunions, among other events. Summer, on the other hand, brings with it a lot of spontaneous entertaining.

  • 1/2 teaspoon kosher salt. 2tablespoon apple cider vinegar
  • 2tablespoon water
  • 3/4cupchicken broth (ONLY FOR INSTANT POT DIRECTIONS)

For Sandwiches:

  • Pineapple that has been cored and diced
  • 1 packaged slaw mix
  • 1/2 cup fresh cilantro, chopped
  • 1 teaspoon fresh jalapeo*, minced
  • 13 ounces Lighthouse Coleslaw dressing
  • 6 brioche buns

SLOW COOKER:

  • In a small mixing bowl, combine the paprika, brown sugar, cumin, garlic powder, onion powder, cayenne pepper, and kosher salt until well combined. Rub the spice mixture all over the chicken breasts, on both sides, and set aside. Pour the apple cider vinegar and water into a slow cooker. Cook on high for 3 hours or low for 5 hours, depending on how much chicken you have. When the chicken is tender, shred it with two forks and place it back in the slow cooker. Pour in the BBQ sauce and mix until everything is well combined.

INSTANT POT

  • Chicken breasts should be placed in the Instant Pot. In a small mixing bowl, combine the paprika, brown sugar, cumin, garlic powder, onion powder, cayenne pepper, and kosher salt until well combined. Half of the spice should be sprinkled over the tops. Using the other side of the breasts, sprinkle with the remaining spice

Pour in the Litehouse Coleslaw Dressing and whisk well to blend the flavors. Distribute the pineapple, Cilantro Jalapeno Coleslaw, and more BBQ sauce on the buns of the sandwiches.

The following nutritional information is for a 1/2 cup portion of BBQ pulled chicken served without coleslaw, pineapple, or a bread (not included). Adding 1 tablespoon of minced jalapenos gives the dish a subtle, mild spiciness that is not overpowering. If you like greater heat, increase the number of jalapenos by a factor of two. TIP: The longer the BBQ chicken is allowed to rest, the more the flavors combine and the better it tastes. Make it a day ahead of time and reheat it just before serving for the finest flavor.

Simply ensure that your crock pot is large enough to accommodate the chicken breasts, or divide the recipe between two crockpots, before beginning.

It doesn’t matter if you choose a creamy coleslaw made with rich and creamy mayo or a sour vinegar-based one; creamy coleslaw is a fantastic match for the savory tastes of barbecue chicken. It’s a light and refreshing side dish that goes well with the savory main course.

7.Baked Wedge Fries

They taste so wicked that you might believe they’re deep-fried, but they’re really baked instead of deep-fried. When making wedge fries, how do you get them to be so thick and tasty without drowning them in a sea of oil? Preparing them in advance by boiling them for three minutes before baking is critical. This procedure breaks apart the starches on the surface of the potatoes, resulting in their being extremely crispy without the need to boil them in excessive amounts of oil. They will taste delicious whether you leave the skin on or peel it off – especially when paired with grilled chicken.

8.Sweet Potatoes

The sweet relative of the potato is also a filling and tasty side dish, much like the potato itself. Make sweet potato fries, roasted sweet potatoes, or mashed sweet potatoes, and you’ll be sure to feed a large group of people. The sweetness also helps to cut through the richness of the barbeque, making it a wonderful side dish to serve with it.

9.Corn on the Cob

Consider adding some corn on the cob to your meal because you’re likely already cooking on the barbecue.

13.Fried Green Tomatoes

If you believe that tomatoes are incapable of standing on their own, think again! You’d be shocked at how addicting fried green tomatoes can taste, especially when served hot. This dish is made with firm, unripe green tomatoes that are sliced and soaked in a cornmeal batter before being baked or fried. They are then cooked to perfection in oil or bacon grease until they are crisp and golden. As a consequence, the tomatoes are gently acidic and covered in a crispy and delicious batter. Yum!

You may also grill fruit to add variety to your meal. When peaches, nectarines, and even watermelon are caressed by the grill, they become even more delicious.

15.Rice

What better way to satisfy those hungry bellies than to serve a bowl of hot white rice alongside your barbecue chicken dish? Chicken in a smokey sauce is made even better by the starch that absorbs the sauce. Do you prefer a more nutritious option? Brown rice should be substituted. It’s important to remember that brown rice takes significantly longer to cook than white rice, and that you should soak the uncooked rice in water for at least 30 minutes before cooking.

16.Quinoa Salad

Consider quinoa instead of rice if you want something that is even lighter and healthier than traditional rice. Protein, potassium, calcium, and a slew of other nutrients may be found in abundance in this super grain. It has a taste that is comparable to rice, although with a crunchier consistency – yet it is still delicious.

This grain may be used to make a salad by mixing it with other ingredients such as tomatoes, basil, corn, and mozzarella. Once it’s done, sprinkle it with some balsamic vinaigrette for an extra kick of tangy, refreshing flavor.

Incredible Slow Cooker Pulled Chicken Sandwiches

People, it’s football season in Szn. That includes spending quality time with family and friends, as well as taking advantage of the weekends. One of my favorite quick and easy dishes for any occasion when you’re feeding a large group is slow cooker pulled chicken sandwiches. Everything should be placed in the slow cooker and let to cook until you’re ready to serve the meal. They’re filling, cooked with a homemade sauce, and can even be served as a midweek meal. Not only is it simple to make these pulled chicken sandwiches, but you can also keep them warm in the slow cooker until you’re ready to serve them, which makes them even better.

Ingredients in slow cooker pulled chicken sandwiches

Using materials that you most likely already have in your cupboard and refrigerator, you can make these simple pulled chicken sandwiches in no time. What’s the best part? You just place the following ingredients in your slow cooker with your chicken and allow the slow cooker to perform its magic:

  • Boneless skinless chicken thighs: I like to use chicken thighs rather than ordinary chicken breasts since they are more soft, less expensive, and more tasty. You can use any type of ketchup you choose. Ketchup with less sugar is my preference
  • BBQ sauce: Once again, you may use whatever type of BBQ sauce that you want to make. Stubb’s Spicy BBQ sauce is my favorite since it has less sugar. Worcestershire sauce: a small amount of Worcestershire sauce lends an incredible savory taste to any dish. Apple cider vinegar: To give the sauce a little acidity, you’ll want to use apple cider vinegar. This is the type of product I use
  • Acidic yellow mustard: the richness of the BBQ sauce is complemented wonderfully with some tangy yellow mustard
  • Spices: we’re including cumin and cayenne pepper to give it a great kick. Buns for hamburgers: I like a whole grain, seedy hamburger bun, but feel free to use whatever brand you’d like (including gluten-free) if you prefer. Make sure to include my renowned homemade healthy coleslaw as a topping on the side! Additionally, a slice of cheese, red onion, fresh tomato, and crisp lettuce are all alternatives
  • The possibilities are limitless.

What Goes Well With BBQ Shredded Chicken?

From my point of view/iStock/GettyImages Chicken is a tasty meat on its own, but when you add barbecue sauce to it, the flavor jumps from decent to rich. When it comes to taste combinations, the dish is almost as diverse as basic chicken breasts. Whether you choose a light salad or a creamy casserole, there are a variety of side dishes that go well with barbecue chicken recipes.

Great Garden Salads

Salads, whether light or delicious, lend crispness to any barbecued chicken dinner. Toss together mixed greens, carrots, celery, onions, and radishes in a light vinaigrette for a nutritious garden salad recipe. To make a creamy side dish with a tang, combine shredded cabbage, shredded carrots, shredded broccoli, and ranch dressing in a mixing bowl. To make a spinach salad, combine baby spinach, red onion, celery, red apples, cranberries, and raspberry vinaigrette in a large mixing bowl until well combined.

Fabulous Fruit Salads

Grilled chicken salads, whether they are light or sumptuous, bring crispness to any meal. Toss together mixed greens, carrots, celery, onions, and radishes in a mild vinaigrette for a nutritious garden salad. To make a creamy side dish with a tang, combine shredded cabbage, shredded carrots, shredded broccoli, and ranch dressing in a large bowl. To make a spinach salad, combine baby spinach, red onion, celery, red apples, cranberries, and raspberry vinaigrette in a large mixing bowl until evenly distributed.

Creamy Casseroles

Using the mellow taste of a creamy casserole, you can put out the flames of a hot barbecue chicken meal in a smooth and silky manner. To prepare a traditional gooey meal, combine macaroni, cheddar cheese, and cream of cheddar soup in a large mixing bowl. To make a substantial side dish that complements the grilled chicken with a creamy flavor, combine chopped potatoes, sour cream, crumbled bacon, chives, and green onions. Combining mushrooms, wild rice, and cream of mushroom soup results in a nutty-tasting gourmet dish that will impress your guests.

Savory Steamed Vegetables

Steamed veggies are a simple way to give a nutritional boost of flavor to a barbecue chicken dish without sacrificing on taste or convenience. Steamed green beans are mixed with almonds to create a simple side dish that has a nuanced taste profile. Sweet corn, butter, salt, and pepper are combined to make a popular barbecue side dish. Cooked peas and carrots with butter and parsley make a bright side dish that reflects the naturally sweet flavor of chicken. Using steam, cook the corn on the cob until tender, then season with butter, Italian seasoning, and Parmesan cheese to make it cheesy on the outside and creamy on the inside.

Beautiful Breads

Making use of barbecue shredded chicken by sopping up leftover sauce with bread is one method to make the most of the dish. Another option is to place the shredded meat on top of the bread and make a sandwich out of it. Combine jalapenos and honey cornbread for a dish that is both sweet and spicy. Garlic powder may be sprinkled over buttered breadsticks to make a simple spiced bread that goes well with any barbecue sauce or sauces.

If you want a strong herbal taste in your chicken, serve it with rosemary wheat buns. Toss cheddar cheese onto sourdough buns before baking to give a dash of sour taste to your grilled meal.

2.Quinoa Salad

Try this tasty salad made with the super grain quinoa if you’re looking for a lighter alternative to rice or other grains. Quinoa salad is packed with protein, calcium, potassium, and a slew of other elements that are needed for good health. It has a flavor that is comparable to rice, but the quinoa in this salad has a crunchier consistency than rice. Quinoa simply has a more solid feel to it than rice. With whatever ingredients you have on hand, you can whip together a delicious and filling quinoa salad in minutes.

Serve this salad alongside BBQ chicken for a delicious meal.

3.Fried Green Tomatoes

In rural kitchens, the fried green tomato is almost as popular as the chicken fried steak. Consequently, you can’t go wrong with include this traditional meal on your list of BBQ chicken sides for the grill. Green tomatoes are difficult to come by throughout the year, which is presumably why they are so prized when served alongside grilled meats. Make sure your tomatoes are entirely green before eating them.

If they’re just starting to ripen, they’ll be far too mushy to handle. Try coating thinly sliced green tomatoes in an egg and milk wash before coating with Italian-seasoned bread crumbs for a unique touch on this classic dish. This information was obtained from BacktomySouthernRoots.com.

4.Corn Pudding

When you put corn pudding in front of people, it goes almost as rapidly as chicken when they are served. Even though children may scowl when they hear the word “corn pudding,” as soon as they taste it, they are sold on the dish. This meal is a traditional recipe made with Jiffy Corn Muffin mix, and it most likely tastes just like the one your grandma used to make it. It’s also a fantastic way to use up any leftover creamed-style corn that you may have purchased by mistake when you were stocking up on canned items.

5.Biscuits

Homemade biscuits are a delectable accompaniment to any dinner. When eaten with BBQ chicken, airy biscuits, on the other hand, have a magical quality to them. The biscuits are an absolute must when you’re serving a complete meal of BBQ chicken, baked beans, coleslaw, and all of the other typical barbecue dishes. For some reason, individuals are apprehensive of creating their own biscuits. It’s almost as if making homemade bread of any type is a terrifying prospect. Because homemade biscuits are quite simple to create, you should give them a try the next time you cook chicken.

6.Baked Beans

There always appears to be baked beans and a cold salad on the sidelines of backyard barbecues and potluck feasts, doesn’t there? Bacon and brown sugar are two crucial elements in the greatest baked beans: bacon and brown sugar. Aside from that, there aren’t many things needed to produce these delectable black beans. The onion, Worcestershire sauce, and bell pepper provide a lot of flavor to this dish, which is also quite healthy. This dish, which uses canned pork and beans, is extremely simple to prepare.

If you don’t want to heat up your kitchen, you can always make these wonderful baked beans in your slow cooker instead of on the stove.

7.Coleslaw

Few things can cool down a hot grilled supper quite like creamy coleslaw, a classic salad prepared from cabbage and other vegetables that is served with a creamy dressing. There are two methods to prepare cole slaw: raw or cooked. One option is to make the popular thick and creamy slaw, which is made with mayonnaise. Other options include a vinegar-based salad with a pleasant tangy flavor and a variation with no vinegar at all. Both recipes are delicious, and it really comes down to what you and your family prefer.

Adding the apple cider vinegar gives it a wonderful zing while combining with the mayonnaise creates a rich, creamy sauce. In addition, if you have any leftover grilled or cooked corn, you may turn it into a delicious corn salad. Spicysouthernkitchen.com is the source for this recipe.

8.Corn on the Cob

Cook some scrumptious grilled corn or other grilled veggies on the grill if you’ve already got it hot and ready. When it comes to summer dinner events, corn on the cob is a must, and we really enjoy grilled corn. Instead of grilling the corn, you may buy frozen corn on the cob to have on hand if you want to make supper even more convenient. Cooking this classic southern dish is quite easy, yet there is a key to getting it just right the first time. When cooking corn on the cob, southern chefs use a cup of milk and a stick of butter to make a creamy sauce.

Spicysouthernkitchen.com is the source for this recipe.

9.Potato Salad

The original method to prepare a classic potato salad is with hard-boiled eggs, mustard, pickle relish, and celery, as seen in the recipe below. The addition of eggs to potato salad is entirely optional; nevertheless, if your family like eggs, potato salad may be a filling supper on its own. Potato salad, like other cold salads, can be prepared ahead of time, for example, the night before a party. This frees up a significant amount of time for you to simply enjoy your barbeque. When it comes to potato salad, there is an ongoing controversy regarding whether or not to use mustard or mayonnaise.

BBQ sauce, such as that found in barbecued chicken and pulled pig, complements the flavors of this potato salad dish beautifully.

10.MacCheese

It is possible to prepare a creamy casserole of baked macaroni and cheese ahead of time so that you may spend your evening socializing with friends and family rather than slaving over the stove. To make things easier, prepare your food the night before or early in the morning, then drop it in the oven before supper and let it cook itself. Made-from-scratch macaroni and cheese is far superior to the blue box kind (although we do enjoy that mac ‘n cheese, too!). You may experiment with this recipe and add various varieties of cheese, such as cheddar cheese, to create a creamy sauce if you want.

As an alternative, prepare a beautiful macaroni salad to accompany your BBQ chicken.

11.Summer Squash and Onions

It’s hard to think of anything more summery than BBQ chicken, but the magnificent yellow summer squash that grows abundantly in gardens every year comes to mind. Despite the fact that squash is a simple vegetable to produce, if you prefer to pick your vegetables from the grocery store, you can always get delicious squash for a low price throughout the summer months. One of our favorite methods to prepare squash is the traditional technique, which we will describe here.

This recipe is as straightforward as it gets, with the squash serving as the star of the show. The addition of a small amount of heart-healthy olive oil makes this classic meal even healthier. Spendwithpennies.com is the source of this information.

12.Greek Pasta Salad

BBQ chicken is a straightforward and unpretentious dish, so why not dress it up a little with a sophisticated Greek pasta salad for a change? A Greek pasta salad cooked with fresh herbs is a light and refreshing dish to present to guests. Furthermore, because it is a cold salad, it may be prepared ahead of time. If you have any leftovers, one of the nicest things about this pasta salad is that it makes a fantastic lunch the next day if you have any. The vegetables in this salad, which include bell pepper, cucumber, olives, red onion, green bean, and grape tomatoes, are filling enough to be considered a meal in and of themselves.

Cookie and Kate is the source of this information.

13.Rice

The traditional white rice is lovely (and tasty), but when you serve brown rice with grilled items, you are transforming one of the world’s most cherished grains into a superfood. For starters, brown rice is rarely mushy when cooked properly. It has a far superior texture than white rice, which is especially important if you want your rice to retain its shape. Brown rice is also a whole grain, making it a heart-healthier option when compared to white rice. Using the method specified in this recipe, you will cook the rice in water for 30 minutes before draining it and returning it to the saucepan.

14.Cornbread

In my opinion, cornbread works well with just about anything. Cornbread may be served with anything from a huge pot of chili in the winter to a BBQ chicken dinner in the summer. It can be served warm or cold. In this recipe, we use ingredients that we enjoy, such as buttermilk and just enough bacon drippings to infuse the cornbread with flavor. There is an ongoing dispute on whether to use plain cornbread or a combination of cornmeal and flour, and this topic has yet to be resolved. Whatever manner your family prefers it, that is the proper method to prepare it.

Dinneratthezoo.com is the source of this information.

15.Fried Okra

Okra is one of the garden crops that produces enormous amounts of produce throughout the summer months. Most likely, you have bushels of okra in your garden if you’re growing it in your backyard. If you need to purchase okra, the good news is that it is extremely reasonably priced at your local grocery shop. The simplest fried okra dish is also the most delicious. With freshly-sliced okra that has been coated in buttermilk and dredged in seasoned cornmeal, you’ll have a BBQchicken side dish that will go in no time.

It’s true, and it’s delicious when served over any type of grilled meat or fish.

16.Baked Wedge Fries

Everyone like French fries, but these baked wedge fries are like a more sophisticated version of the classic. Furthermore, they are considerably healthier than French fries since they lack the greasiness that French fries are known for having. This recipe’s key to perfectly baked potato wedges lies in boiling them for three minutes before baking them.

That’s what gives them their lovely and crispy outside texture and flavor. You have the option of making these fries with or without skin. Whatever method you use, you can rest assured that your guests will devour them. Sally’s Baking Addiction (http://www.sallysbakingaddiction.com/)

17.Strawberry Shortcake

Who’s up for some sweet treats? It’s always possible to find room for dessert at a barbecue with friends and family, and what better way to enjoy a sumptuous dessert than by serving it with fresh berries? Making a handmade strawberry shortcake is a lot simpler than you would have thought it would be. You may either purchase the little cakes from the grocery store or prepare these simple homemade biscuits. These biscuits will demonstrate to your visitors that you went above and beyond to provide them with something genuinely memorable.

18.Watermelon

If you’ve already got your grill ready to go, why not experiment with something completely different and delicious? We’re talking about watermelon that’s been grilled. You may, of course, offer watermelon in the manner in which we all prefer it: sliced and ready to consume. You can even cut up watermelon and toss it into a fruit salad for a refreshing treat. Grilling, on the other hand, brings out a surprising flavor in watermelon that everyone should experience at least once in their lives. In the video below, you can see how they cook the watermelon on a skewer.

They finish by sprinkling cotija cheese on top for the grand finale.
