Grilled Italian Sausage Sandwiches with Pepper-Onion Foil Packs

One of our favorite tailgate party foods is grilled Italian sausage sandwiches with pepper-onion foil packs. (This post has been updated.) Memorial Day is only a couple of weeks away, so plan ahead. In light of the fact that social separation will most certainly still be in effect, this year’s celebration will most likely be unusual (to protect against the spread of COVID-19). It is our intention to hold a barbecue in a nearby state park (provided the park is still open by that time; if not, we may have to settle for a parking lot).

Grilled Italian Sausages with Pepper-Onion Foil Packs will be one of our favorite pack-and-go destination grilling dinners, and we’ll be bringing it along.

Meal-prep: the pepper-onion foil packs

Creating foil packets with peppers and onions is a straightforward process that takes only minutes. Simply create two pockets out of heavy-duty aluminum foil. Use foil rectangles that are approximately 12″ x 20″ in size, fold them in half, then roll the two sides that are next to the fold. After that, fill each pocket with sliced sweet onion and red bell pepper, season with salt and pepper, and drizzle with olive oil. Finally, seal the pockets and wrap up the remaining side of the paper. Keep refrigerated until you’re ready to pack up your belongings.

Prepping the grill

We are big lovers of charcoal here at the house. Having said that, you may, of course, use a gas grill to prepare your meal (set it up for medium heat and indirect cooking). This lunch was prepared on a variety of barbecues, including a full-size Weber, a little Smokey Joe, and in-ground grills found at parks. Bringing a grill brush with you will allow you to clean the grates if you want to go with the last option. a recent grill-out at Miller Park in Milwaukee, WI, for a tailgate party for two people.

Combining this technique with the practice of letting coals ash over before adding the meat helps to ensure that your meal does not taste like fuel.

Cooking the sausages and pepper-onion foil packs

We prefer spicy Italian sausages, although mild Italian sausages are also available. The foil packets should be placed on the indirect heat side of the grill, while the sausages should be placed directly over the embers. Grill the sausages for 3–5 minutes on each side, turning halfway through, to brown them. Once browned, transfer to the indirect heat side of the grill and cook for another 12-15 minutes, or until the meat is cooked through. Every 5 minutes or so, flip the container. Every 5 minutes or so, rotate and turn the foil packets to ensure that the veggies are completely cooked through.

Serving your Grilled Italian Sausage Sandwiches

We always lightly toast our rolls for a minute or two before presenting them to our guests (use good bratwurst buns or hoagie rolls).

A layer of melty provolone cheese is our preferred topping for our sandwiches, but it is entirely optional. Place two slices of provolone cheese (if using), one sausage, and about half a cup of the pepper-onion mixture on a toasted bread and toast it for another minute.

Ingredients

  • CookBlogShare, a terrific food blogger recipe-sharing event hosted this week at Recipes Made Easy, is where I’m offering my Grilled Italian Sausage Sandwiches with Pepper-Onion Foil Packs.

Instructions

  1. To assemble the foil packets, rip two sheets of foil measuring 12″ x 20″ each. Each one should be folded in half. Each piece should be rolled three–four times firmly to form a pouch, with the sides next to the fold. Combine the cut onions and peppers in a large mixing bowl. Approximately divide the mixture between the two foil bags. Add 12 teaspoons salt, 14 teaspoons freshly ground black pepper, and 1 tablespoon of oil to each pouch and mix thoroughly. Seal the pouch by folding the top of the pouch numerous times. Refrigerate until ready to use. Prepare a charcoal grill for indirect heat by soaking it in water. The sausages should be placed immediately over the embers when the coals are hot and entirely ashy white (white-hot). Place the pepper-onion packs on the grill’s indirect heat side
  2. Cook for about 15 minutes. Grill the sausages for 3–5 minutes per side on both sides, or until browned (make sure they don’t burn
  3. See Recipe Note1), turning halfway through. Turning as required, continue grilling for an additional 8–9 minutes (for a total of 15–18 minutes to cook through) or until the chicken is well done. You may toast your rolls by moving the sausages to an indirect heat source and toasting the bread until it is lightly toasted. To assemble the sandwiches, place 1–2 slices of provolone cheese (if using) on the bottom of each roll before rolling it up. In a large mixing bowl, combine one hot sausage and 12 cup of the pepper-onion mixture (see Recipe Note2)
  4. Mix well.

Notes

  1. If your fire is too hot, transfer the sausages to a cooler area where they will cook more slowly. Turn every few minutes until the chicken is cooked through. When opening the foil packs, use extreme caution to avoid getting steam burns.

It’s best to start by boiling the sausages in water on the stovetop until they’re thoroughly cooked before placing them on a hot grill for a few minutes until they’re gently charred and bronzed, as shown in the photo above. When the sausages are simmering, they are less likely to dry out on the grill, and thoroughly cooking them before grilling reduces the likelihood of flare-ups. If you don’t want to go to the trouble of simmering before grilling, that’s just OK. If you don’t want to go through that procedure, simply cook the sausages on a low heat for a few minutes before finishing them on a hotter portion of the grill.

The liquids from the sweet peppers combine with the oil and vinegar to form an emulsified, dressing-like coating on the veggies that makes them excellent enough to eat on their own without any other ingredients.

The peppers and onions, instead of serving as a necessary vegetable accompaniment, shine brightly alongside the A-list cut of meat.

Ingredients

  • 2 lb. hot Italian sausage
  • 4 bell peppers, sliced in half lengthwise with seeds and stems removed
  • 2 lb. hot Italian sausage
  • 2-inch-long onions, peeled and quartered lengthwise, with the root still attached
  • SALT and freshly ground black pepper are essential ingredients. 1 garlic clove, peeled and grated
  • 1/4 cup chopped oil-packed sun-dried tomatoes
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 6 soft Italian sub rolls

Instructions

Put the sausages in a large pan over medium heat and cover with water until they are almost completely immersed. Increase the heat to medium-high and continue to cook until the water comes to a boil, then reduce the heat to medium to maintain a simmer. Cook the sausages for about 10 minutes total, turning them halfway through, until they are completely cooked through. Remove from the oven and place sausages on the grill, searing on all sides until grill marks develop, about 3 minutes more. The internal temperature of the sausages should range between 160 and 165 degrees Fahrenheit.

3While that’s going on, throw some onions and peppers on the grill.

If they begin to char too rapidly, reduce the heat on the grill (or transfer them to a cooler portion of the grill) until they are no longer charred.

Remove the chicken from the grill and set it aside.

5Once the peppers and onions have been allowed to cool sufficiently, cut out the root to break apart the onion wedges and slice them lengthwise into 12 inch strips.

Transfer the veggies to a large mixing bowl with the garlic, tomatoes, oil, and vinegar and toss to combine. Season liberally with salt and pepper to taste. Toss thoroughly. Season with salt and pepper to taste. 6Stir the sausage and pepper mixture into sub rolls and serve immediately to guests.

Notes

If you’re spending a summer evening outside by the grill, rosé and lighter-bodied reds that are slightly cooled are ideal. An off-dry German riesling would be ideal for balancing out the heat, while a high-acid German Pinot Blanc would be ideal for balancing out the sweetness of the peppers. Try a Sicilian red or a Californian Syrah if you want something a little stronger and pepperier.
