Cookies made with chocolate wafers 1 3/4 cups (245 g) all-purpose gluten-free flour (for the entire recipe) (I used my mock Better Batter) a quarter teaspoon of xanthan gum (omit if your blend already contains it) a half cup (40 g) cocoa powder that has not been sweetened (natural or Dutch-processed is fine, but I prefer Dutch-processed) 1/8 teaspoon bicarbonate of soda a quarter teaspoon of kosher salt Granulated sugar in the amount of 1/4 cup (50 g) 1/2 cup (109 g) light brown sugar that has been packed a total of 6 tablespoons (72 g) melted and cooled vegetable shortening (I use Spectrum nonhydrogenated shortening) unseasoned butter, heated and chilled 3 tablespoons (42 g) unflavored butter at room temperature, beat 2 eggs (120 g, out of shell), at room temperature, beat pure vanilla extract (about 2 tablespoons) Ice Cream with Marshmallows*2 cups (16 fluid ounces) whipping cream with a lot of air 1/2 packet (4 g) unflavored powdered gelatin (optional).

warm water, 1/2 cup (4 fluid ounces), and a pinch of salt 200 g granulated sugar (1 cup) granulated sugar a quarter teaspoon of cream of tartar 1/8 teaspoon kosher salt (optional) *1/2 teaspoon pure vanilla essence is recommended.

You may use store-bought gluten-free vanilla ice cream if you prefer, but be sure to let it rest out at room temperature for approximately 30 minutes to soften before using it to build the ice cream sandwiches.

  • Make the wafer cookies according per package directions. Preheat the oven to 325 degrees Fahrenheit. In a large mixing bowl, add the flour blend, xanthan gum, cocoa powder, baking soda, salt, and granulated sugar, whisking constantly, until everything is thoroughly combined. Add the brown sugar and whisk again, making sure there are no lumps in the mixture. Make a well in the center of the dry ingredients and pour in the shortening, butter, eggs, and vanilla, mixing well after each addition until everything is thoroughly combined. The dough should be smooth and flexible once it has been brought together. Dividing the dough into four equal pieces is a good idea. One piece of dough should be rolled out between two pieces of unbleached parchment paper into a square that is about 8 inches all around and 1/4-inch thick, then cut into squares. Remove the top layer of paper and use a pastry or pizza wheel or a sharp knife to trim the edges to produce a 7 1/2-inch square on the baking sheet. Continue to transfer the dough, still on the parchment paper, to an 8-inch square pan, tucking the edges of the parchment paper in as required to help the dough to lie flat in the pan as it is transferred. Repeat the process with the remaining dough pieces. Placing the pans, two at a time, in the preheated oven and baking until the middle is set is recommended (about 8 minutes). Immediately remove the pans from the oven and let to rest for at least 10 minutes before transferring to a wire rack to cool fully. While the cookies are cooling, prepare the ice cream. Heavy whipping cream should be placed in the bowl of a stand mixer fitted with the whisk attachment or in a large mixing bowl with a handheld mixer fitted with the whisk attachment. To make soft peaks in the cream, beat on medium speed until it forms. To chill the mixture, transfer it to a separate bowl and set it in the refrigerator for 30 minutes. Place the gelatin and 1/4 cup (2 fluid ounces) warm water in the clean bowl of your stand mixer with with the whisk attachment, or in another large mixing bowl with a handheld mixer, and mix until smooth. Combine the ingredients and set aside until the gelatin has bloomed. It is going to swell. To make the caramel sauce, add the remaining 1/4 cup (2 fluid ounces) water, sugar, cream of tartar, and salt in a small heavy-bottom pot and stir until well combined. The saucepan should be placed over medium heat with a candy or deep fry thermometer clipped to the edge of the pan. Allow the sugar mixture to simmer, undisturbed, until the temperature hits 238°F, which is the softball stage of cooking. After removing it from the heat, stirring in the vanilla, pour the hot sugar mixture down the edge of the mixing bowl, making sure it doesn’t strike the whisk, and stir until completely incorporated. The combination will bubble for a short period of time before subsiding. With a whisk, beat the mixture on medium speed until it is thick, white, and glossy, and has about tripled in size, about 3 minutes. Remove the whipped cream from the refrigerator and gently fold it into the marshmallow mixture until everything is well-combined
  • Assemble the ice cream sandwiches in the appropriate order. Once the wafer cookies have cooled, arrange two cookie squares on crisscrossed sheets of unbleached parchment paper and set each in an 8-inch square baking pan that has been allowed to cool completely. Place a cookie square on top of each cookie square in each of the two baking pans and pour the ice cream mixture evenly across the tops of the cookies. Place the remaining two cookie squares on top and press down firmly but gently to seal the edges. Placing the baking pans in the freezer for several hours or until the ice cream is hard is recommended (at least 4 hours). Once the ice cream has frozen, take it from the pans and cut each one into eight rectangles of similar size with a sharp knife. Wrap individual ice cream sandwiches with plastic wrap and place them in the freezer until ready to serve

It also does not oversell the size of the treat. There are six 2′′ × 2′′ ice cream sandwiches in total, each individually wrapped in clear plastic. In the traditional sense, ice cream sandwiches are frequently wrapped in paper, which can be a hassle to remove off the sandwich.

Getting that piece of paper off isn’t a very difficult task, but I recall that it used to rip on me every time. Because of the plastic wrap, you can get those tasty empty calories into your system more quickly, which is great news!

True story: it’s flavorless at first, then the aftertaste strikes you in the back of your throat with a tiny trace of chocolate, and it’s very delicious. The cookie has a small graininess to it, which is to be anticipated with gluten-free products, but it is not distracting in any way. Interestingly enough, just one person in our group noticed the graininess, hence FatBoy has won this round! A typical ice cream sandwich is made using a cookie that is exceptionally soft and thin.

These FatBoy gluten-free ice cream sandwiches, on the other hand, are a different story.

While I enjoy the way the conventional version melts in your tongue, I find that the FatBoy version holds up better over time.

Overall, the cookie might use some work in the flavor category but shines in terms of structural and textural qualities.

What is it about this ice cream that makes it taste just like full milk and sugar? The first component, which is fresh whole milk, is self-explanatory. Because of how milky this is, I wouldn’t have been shocked if whole milk had been one of the first four ingredients listed. I don’t like the flavor of milk (particularly when it’s sweetened), so I wasn’t put off by the taste of the ice cream at first, but I was shocked. The boast of “Premium Ice Cream,” on the other hand, has me a little perplexed.

Bob’s Red Mill gluten-free flour blend was used in this recipe. Gluten-Free Baking Flour that may be used 1:1 with regular flour. Unsweetened cocoa powder- We like Dutch processed cocoa, but you can use whatever type of cocoa that you choose. If you are using salted butter, you can omit the salt altogether. Baking powder – Aids in the rise and texture of the gluten-free ice cream sandwiches’ outer layer by raising the temperature of the batter. Unsalted butter – You may substitute dairy-free butter for the regular butter, but be sure to leave out the salt.

The use of granulated sugar enhances the sweetness and wetness of the dish.

Vanilla extract – To enhance the flavor and depth of the dish.

How to make Gluten Free Ice Cream Sandwiches?

  1. In a medium-sized mixing bowl, whisk together the gluten-free flour blend, the cocoa powder, the salt, and the baking powder until smooth. Make a mental note to put it away. Afterwards, trim the sides to produce a perfect rectangle and slice the cookie slab along the center to create two smaller rectangles, each approximately 8″x12″ in size
  2. Placing the baking sheet with the cookie slabs in the freezer for 10 minutes will allow the slabs to be handled more easily without crumbling. Once the cookie slabs have been frozen, lay one of them bottom side up on a cool surface. Using a spatula, spread the ice cream over the top until it is fully coated. Place the remaining cookie slab on top. Freeze for about 2 hours, or until the mixture is solid. Remove the rectangles from the freezer once they have firmed up and cut them into 12 pieces.   • I tested this recipe using Bob’s Red Mill 1-to-1 Gluten-Free Baking Flour, which already contains xanthan gum, to see if it worked. Please keep in mind that some blends may not contain xanthan gum, in which case you will need to incorporate it into the recipe. I suggest adding ½ teaspoon of xanthan gum if your blend does not already contain it
  • sI like to roll my cookie dough in between two pieces of parchment paper. This method eliminates the need to add additional flour to the dough and ensures that the cookies remain extremely smooth and chocolatey
  • The flour must be spooned into the measuring cup and then leveled off before using. Do not scoop the measuring cup into the bag of flour, it will be too thick and you will get extremely floury cookies
  • Ice cream can be finicky to work with because it melts so quickly. In order to make it easier to spread the ice cream onto the chocolate wafer cookie slab, I cut the ice cream box and unwrapped it from the very cold ice cream before spreading it on the cookie slab. Then I cut the ice cream into chunks and arrange them on top of the slab. I gently smooth out the ice cream with a warm offset spatula (you can run the spatula under hot water and then wipe it dry with a paper towel). It’s much easier and cleaner to do it this way than to let the ice cream soften naturally

  • 3/4 teaspoon sea salt, 2 teaspoons pure vanilla extract, 1 teaspoon baking soda, 1/2 teaspoon baking powder, 2 1/4 cups gfJulesTM All-Purpose Gluten Free Flour, 1 cup firmly packed light brown sugar, 1/2 cup granulated cane sugar

  • 1 stick (1/2 cup) butter or nondairy substitute (Earth Balance® Buttery Sticks)
  • 1 stick (1/2 cup) palm or vegetable shortening or coconut oil, room temperature
  • 1 stick (1/2 cup) palm or vegetable shortening or coconut oil, room temperature 2 large eggs (or egg replacer – either reconstitutedEner-G® brand+ 2 extra Tbs. water or 1/2 cup applesauce)
  • 12 oz. semi-sweet chocolate chips (or dairy-free chocolate chips likeEnjoy Life Foods®), peanut butter chips, or a combination of the two

Instructions

Preheat the oven to 350° F (static) or 325° F (convection) (convection). To make cookies from scratch, follow the directions on thegfJulesTM Cookie Mix, or if using a cookie mix, bring the butter and shortening to room temperature before creaming with the sugars until light and fluffy — several minutes. Combine the vanilla extract, eggs (or egg replacement), and butter until well blended. In a separate dish, mix together all of the dry ingredients. In a slow, steady stream, whisk in the dry ingredients until well incorporated.

  1. Toss heaping tablespoonfuls of the mixture onto a baking sheet lined with parchment paper, spacing them at least 1 inch apart.
  2. Place the pan in the oven for 8-9 minutes, or until the tops are gently browned but the centers are still a bit underdone.
  3. To create bite-sized sandwiches, scoop out teaspoon-sized quantities and form into a ball between your hands; flatten slightly and bake for only 5-6 minutes at 350°F or until golden brown.
  4. Once the cookies have completely cooled, delicately take one of the cookies and pour a scoop of your preferred ice cream on top.
  5. Spread the ice cream over the entire cookie, covering it completely.

Place the container in the freezer for at least 30 minutes, or until the contents are completely frozen.

Please keep in mind that I have eaten these sandwiches on several times without freezing them first. I couldn’t wait any longer!
