How to Make a Wrap that Doesn’t Taste Like Airplane Food

I’ll say it again: cold cuts don’t belong wrapped in a tortilla. In lieu of this, roast a large vegetable medley for dinner and use the leftovers to stuff a wrap with for lunch the next day. Roasted sweet potato or winter squash chunks, roasted onion, roasted pepper, roasted tomato, cauliflower, shallots, and beets are all good additions to this dish. Almost any vegetable will suffice in this case. In the spring, leeks or asparagus would be particularly delicious. I also like to include cooked beans or roasted chickpeas in my dishes.
