I wrote this piece on April Fool’s Day in 2004 as a joke. Have you ever noticed how difficult it is to resist eating dill pickles in the United States? Elsie’s, a sandwich cafe in Haddon Township, New Jersey, roughly 30 minutes west of Philadelphia, makes its sandwiches with pickles instead of bread, according to the company. The restaurant’s website claims that it is the “home of the pickle sandwich,” despite the fact that it has only been open for nine weeks. Elsie’s Italian sandwich is a classic. Make 8 slices of tofu and blot them dry with a paper towel before cooking. 2. Toss the tofu into the skillet and cook, rotating once, until it is brown and crisp on both sides, about 3 to 4 minutes each side. 3. 3. Split the buns in half and spray the insides with a little oil before broiling for 2 to 5 minutes, or until they are gently browned.

  1. In a small mixing bowl, blend 1/3 cup mayonnaise and 1 tablespoon Dijon mustard until well combined.

  3. Place 2 slices of tofu on top of each sandwich and seal the sandwiches before serving.

Broil the bread, flipping once, until it is toasted on both sides, about 2 or 3 minutes each side, until it is toasted on both sides.

Similar to pimento cheese — made with grated cheddar and cream cheese or mayonnaise — but without the pimento and with diced pickles instead.

  • Two dill pickles
  • One bunch fresh parsley
  • Eight slices of sandwich bread
  • 1/4 cup olive oil Salt and pepper to taste
  • 8 slices American, Swiss or Cheddar cheese
  • 2 tablespoons Dijon mustard

Instructions

Set the broiler on high and position the rack 6 inches away from the heat. 2. Drain the tuna and place it in a medium-sized mixing bowl. 2 pickles, finely chopped, should be added to the bowl. 1/4 cup parsley should be chopped and added to the bowl. Place 8 pieces of bread on a baking sheet with a rim. Cook the bread, flipping once, under the broiler for 2 to 5 minutes, until it is gently browned on both sides. After you’ve turned it, add 2 pieces of cheese to the top. 3. Toss the bowl with 1/4 cup olive oil, 2 teaspoons Dijon mustard, a pinch of salt, and a sprinkle of pepper.
