  • Cut the onions into strips that are all the same size
  • In a large pan, heat the butter and olive oil over medium high heat until the butter is melted. Once the butter has begun to sizzle, add the onions and swirl well to mix them. Reduce the heat to medium and let the onions to cook for approximately 5 minutes, stirring occasionally. Continue for approximately 20 minutes. Add an additional tablespoon of butter or olive oil if necessary. If you see that the onions are starting to burn, reduce the heat to medium-low and cover the pan. Continue to stir every 5 minutes until you have golden caramelized onions on your hands
  • Around 20 minutes.

AU JUS:

  • While the onions are caramelizing, if you’re preparing your own au jus, now is an excellent time to get started on the sauce. This is a wonderful opportunity to reheat any leftover Au Jus and let it boil while the sandwich is being assembled.

GARLIC BREAD:

  • After the onions and au jus have been simmering for a while, you may start on the garlic bread. Pre-heat the oven to broil (on the highest setting)
  • In a small mixing dish, combine the butter and the grated garlic
  • Set aside. Spread the spread on both slices of bread in an even layer. Remove from the oven and set aside until you are ready to cook and assemble

CONSTRUCT THE SANDWICH:

  • Put two pieces of bread on a cookie sheet, garlic spread side up, and broil for 3-4 minutes, or until the desired brownness is attained, until the bread is toasted. Remove the baking sheet from the oven
  • One slice of bread should be set aside. Finish by layering the remaining prime rib, caramelized onions, and pickled peppers on the second slice of bread and broiling until the meat is warmed through, 3-4 minutes. Add the cheese to the top of the dish and broil for approximately 1-2 minutes, or until the cheese has melted. Keep an eye on the cheese since it will begin to melt fast. Preparation

  • Preheat the oven to 350 degrees Fahrenheit. Place the garlic cloves in the center of a piece of aluminum foil and put the rosemary sprigs on top of the garlic cloves.
